Many people in the world either cannot or choose not to have any gluten in their diet.

So here's a thread for your favorite gluten-free recipes to share for everyone to enjoy! You can link to online recipes, post scans from magazines or cookbooks or type out your own! (Desserts are especially welcome!) Just MAKE SURE the recipe is actually gluten-free! That means no wheat, barely, rye or (sometimes) oat products.

Acceptable starches and grains: Corn, potatoes, rice, tapioca (cassava), amaranth, arrowroot, millet, montina, lupin, quinoa, sorghum (jowar), taro, teff, chia seed, almond meal flour, coconut flour, pea flour, cornstarch, yam, bean, soybean, and nut flours.

I'll kick things off by posting this AMAZING recipe for Mayo Chicken! I've had similar versions and they're always delicious! If you don't like mayo, don't worry. You don't even taste it once it's done.

I find a lot of good recipes on the Minimalist Baker blog. The gluten-free section is here. There are lots of dessert recipes, plus waffles, dips and much more! AND everything I've made from there has been super-delicious! Which is saying something as I'm definitely a beginner at cooking/baking. xD

I have several friends who are Gluten Free. One has Celiacs disease and another has Lupus. Gluten makes her have flare ups. I've found several good recipes from AllRecipes (my favorite recipe site) AllRecipes GF

One that I found was a huge hit at a party my friend with Lupus had. Bacon wrapped smokies. They were the first thing to be devoured and everyone talked about them for the rest of the night. And I made two batches lol. Anyway, here's the recipe: Bacon Wrapped Smokies -1 pound of bacon, cut into 1/3 pieces -1 pack of beef cocktail weenies

  • Bag of brown sugar

-Preheat the oven to 325 degrees F (165 degrees C). -Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all. -Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

I would recommend placing wax paper on the baking sheet before you place the weenies on the sheet. Makes for easier clean up

I found a super yummy gluten free and dairy free citrus herb encrusting from Grandpa's Gluten Free Gourmet. The encrusting is so flavorful that it goes really well with basic sides. I usually have it with unseasoned steamed green beans and buttered mashed potatoes or brown rice. It's one of the few encrusted chickens I've had that I've not even been tempted to put gravy on!

Gluten Free Baked Chicken

1 lb. Boneless Chicken Breasts 1/2 tsp. garlic (I used minced but you can also use powdered) 1 bag Citrus Herb Encrusting 1/2 c. of Butter (or eggs or oil depending on dietary restrictions)

  1. Pre-heat oven to 375°
  2. While preheating, combine and melt garlic and butter in oven pan (instructions on the bag say to use glass but I just used a regular aluminized steel pan lined with tin foil for easy clean up) 3)When butter has melted remove from pan and stir.
  3. Dip chicken into garlic butter
  4. Coat chicken in encrusting and place back in pan
  5. Bake for 45 minutes or until juices run clear

Oh, also, I just made this today. I don't have a link to anything because this is a family recipe.

Simple Mexican Scrambled Eggs (serves one of me ymmv):

2 tbsp of butter or oil 3 eggs 2 corn tortillas 2 tbsp salsa or pico de gallo handful of cheese (to taste) a pinch of ground cumin (about 1/4 tsp or less) salt (to taste) black pepper (to taste)

  1. Slice corn tortillas into strips
  2. Heat butter or oil in skillet on medium-high heat.
  3. Drop corn tortillas in pan, cook strips flipping occasionally until both sides until golden brown
  4. Reduce the heat to low. In a small bowl, whisk together the eggs, cumin, salt and pepper.
  5. Pour the eggs over the tortillas, quickly add salsa and cheese, and cook, stirring frequently, until the eggs are as set as you like them. Remove from the heat.
  6. Add more salsa as a side or on top if desired

Most corn tortillas are gluten free, HOWEVER, if you have to be really careful about cross contamination and don't trust anything that started as dough that doesn't come out of your own kitchen here is a really simple corn tortilla recipe.
