Pumpkin Parfaits Makes 8 desserts
Active time:30 min Start to finish:2 1/2 hr
1 envelope unflavored gelatin (2 1/4 tsp) 1/4 cup cold water 1 (15-oz) can pure pumpkin 1/2 cup packed light brown sugar 1/2 teaspoon cinnamon 1 Package cinnamon sticks 1/4 teaspoon ground ginger 1/8 teaspoon salt 16 oz whipped cream, divided (8oz and 8oz) 1 1/2 teaspoons pure vanilla extract, divided 20 gingersnap cookies, coarsely crushed 10oz bag of small marshmallows
Substitutes: cinnamon=cinnamon sugar whipped cream=2 1/4 cups chilled heavy cream (1 cup cream and 1 1/4 cups cream)
Equipment: 8 (9oz) plastic cups -or- 8 (6oz -8oz) glasses
Step 1: Whisk together pumpkin, brown sugar, cinnamon, ground ginger and salt in a large bowl. (You can use cinnamon sugar here but with the whipped cream, some people find the added sugar too sweet, you can always add if you don't like the mixture AFTER adding the gelatin)
Step 2: Sprinkle gelatin over water in a small saucepan and let soften 1 minute. Bring to a bare simmer, stirring until gelatin has dissolved. (Should look like yellow liquid)
Step 3: Add gelatin mixture to pumpkin mixture and whisk fairly well
Step 4: Put pumpkin mixture aside and beat 8oz whipped cream with 1/2 tsp vanilla until it holds soft peaks in a separate bowl, then fold into pumpkin mixture gently but thoroughly.
Step 5: Beat remaining 8oz whipped cream with remaining 1 tsp vanilla until it holds soft peaks. (You can add the marshmallows now if you want or you can just put them on top)
Step 6: Spoon about 1/4 of the pumpkin mixture into bottom of each glass/cup, then sprinkle with some of cookies and top with about 2 Tbsp whipped cream. Repeat layers once, ending with cream. (If desired) Add marshmallows to the very top, then slide a cinnamon stick in like a straw. You can also sprinkle cinnamon sugar on top!
CHILL UNTIL SET, at least 2 hours. For those of you that don't know, gelatin will firm it up a bit, similar to a chocolate mousse, mushy pumpkin may not be the best tasting dessert! And don't be afraid to add your own twist to it! Be bold and mix chocolate chips in with the crushed up ginger snaps!

They were AMAZING, it was so absurd that I only made 8... Never again, I'll be making at least 24 next year! For December I'm making a "Christmas" Chex-Mix and then making a bunch and wrapping them up in cellophane all pretty and making a gift basket for my Dad ^^

They're SO GOOD, i don't like pumpkin pie but i almost ate like 4 and it was hard to wait two hours for them to chill! Get creative guys! you don't have to follow the recipe exactly, i thought gingerbread would be nice :)
They're super easy to make, you basically need like 2-3 large bowls i thought piping the layers would be easier because i made a bit of a mess spooning it in, plus you'll be wasting just as much as if you scrape the bowl with a spoon :)
all of the ingredients cost about $20, and most of it you can find at the dollar store (check exp dates!!)

my local grocer carrys easy pumpkin pie mix but no pumpkin in a can :(
im not surreee if you meant to ping me but maybe you could just cook some pumpkin and make it into a puree type thing ? :) in new zealand we can get pumpkins this time of year but if you are northern hemisphere maybe you cant

you are so lucky.. pumpkins are an October, September, November item here in America... kicks holidays they have easy pumpkin pie mix but i looked at the ingredients and it has ALL KINDS of stuff in it :(
oh okay :) that sucks about the seasons! ummm all I can say is shop around:) maybe other supermarkets will have what you want <3 best of luck! or just fly to new zealand and I'll give you one ;D we have a million in the garden that are near ready :) x
