Yeah. I just made up my own recipe from scratch, and I wanted to share it with you. In return, I'd love to see any recipes you and your family use!

Pork Chop Bites

Now, I didn't measure a thing. I eyeball it. But here's what I used.

(4) pkgs of 4 thinly sliced pork chops Around 2-3 cups of Italian seasoned breadcrumbs Around 1-2 cups of complete pancake mix Dash of onion powder around a tablespoon of garlic salt two pinches of crushed red pepper (opt)

YOU MAY NEED TO MAKE MORE BATTER. I'VE HAD TO TWICE. lol.

  1. Cut your porkchops into bite-sized pieces. Try not to cut them too small.
  2. Mix all the dry ingredients together in a small bowl, then add water until it's just a little more runny than it is thick. You want it a consistency that you can coat the porkchops with.
  3. Coat each little bite with the mixture and set them aside as you get your pan ready.
  4. Coat the bottom of your pan with oil. Make sure it's enough to fry the chops.
  5. Test out the temp. with a little drop of the batter- DO NOT USE WATER. Common sense, people. Oil doesn't go well with water.
  6. Place 5-10 bites in the pan, depending on size. You want them far enough apart for you to be able to easily flip them when the time comes.
  7. Fry for two-three minutes on each side.

Depending on oil temperature, they'll either be a perfect golden color, or a slightly darker brown. Either tastes delicious!

That sounds so good - do you just eat them by themselves? It sounds like it would be delicious in a summery pasta, or something. :]

I love experimenting with food, especially when it's leftovers. I love taking leftovers and changing them into something completely new.

Something really good to try next time you have leftover pizza (especially if it has TONS of toppings); scramble up some eggs, scrape the toppings (cheese and everything), mix them with the scrambled eggs, toast the crust. Delicious.

As of now, they're eaten by themselves. But I was SO tempted to mix them with pasta! They're SO good. Man, food experimenting is GREAT.

And that pizza thing. Sounds. Good. I don't know why, but it does. I'll have to try it next time we have leftovers. :D
