This was probably answered when the achievement system first came out but I havent been around subeta in a while. I've done a number of things that havent been awarded (like used elixirs and potions on my pets) and havent been given the achievement for them. Is there a way to get the achievement now or do I have to do it all over again?

You have to do it again I am sure, some Achievements just cannot be awarded afterwards ~ had to use another Potion and Elixir as well for example. :3

Not really, a lot of us want a newer, shinier pet. :)
