You can change as many pets as you want~ Just finish the quest, and then you can do another.

My top two are Kos and Acuto, too. I think Acuto would be my first choice, since I like Paralixes more and I wouldn't mind having an arid one for a while. Not as fond of plain posed sheetahs. P:
