So I am confused on exactly what do minions do? Also, what is the point of having more then one minion if your pet can only equip one?

It keeps your pet happy and if you have more than one pet, you can give other minions to them.

You can also stick minions in the pet's treasure, so he or she can technically have more than one minion depending on how many pet treasure slots you have.
