They are wonderful but I think awful fiddly. And for me to do enough to eat Xmas day as well as for gifts takes at least 3 lots of dough which after that I have had enough. But I use diced bacon pieces saves a lot of work.

mmm bacon rolls...fresh bread now you are making me want to do it tooooo. i used to get starter and keep it going for banana breads and like that .. how do you start a sourdough starter pl??

I am not at home but can post my recipe if you want when I get back tomorrow. For the bacon buns that is if you are interested in making then. I have made a few differences to the net recipes. Which does not affect the taste just the ease of making. Actually I had some traditional Latvian bacon made by Latvians at a funeral not that long ago and there was not much difference but I thought my way was better ... of course I would.

yes on that recipe..og rats though 3 of the 5 of us cant eat bacon!!:(:(

 Today getting the last few ingredients for CHristmas eve dinner.  I have 1 vegetarian and 2 pescatarions.(will eat seafoods) and 1 non-dairy..and then 2 for prime rib mmmm.

  Seems such a small event with immediate only. 

  My daughter is questional about coming because 2 at work(they work closely in back)testing positive. 1 of which the owner KNEW about but didn't tell anyone !!!! When he did they all walked out and paid 150.00 EACH for rapidtests and 1 was a positive test as well.  SIGH.

i cant help but worry..as i lost a great loved one in December to covid. as soon as he was taken off the ventilator .hope things change in 2021...

- there are tons of recipes on YouTube for sourdough bread...and starter. The recipes might vary a little bit but they seem to all work and once you get started they are simple.

I try not to get on a super personal level, but today I feel I need to. Because maybe this comment is the best gift I can give this holiday season!

Because my feelings were super hurt with a family member, because that person lives far from me. I had no clue on how they are dealing with life in COVID. We had many superficial conversations, with both sides trying not to burden the other. Turns how family member was/is not coping well and a good sincere conversation, was much needed. Sometimes people are hurting and barely coping with life in COVID. Sometimes someone to talk to means the world. If you are for any reason having difficulty with a personal relationship. Your feelings may be hurt over something, before you continue with that. You need to talk with anyone in your life that you value, and have got your feelings hurt over a misunderstanding. No accusations, just say I am here and I dont understand whatever it is thats bothering you. Because things maybe not be like your thinking, because you dont have all the details. believe me, yes I am concerned over family member but this to shall pass. So go have that important conversation. Call anyone in your life, that you think needs to hear a friendly loving voice. You never know how much better you feel emotionally until you do. So for Christmas or Hanukkah or whatever you celebrate, give the best gift to yourself, your friends and loves ones you can give this season/year. Call and listen, and reassure them your just a call away day or night.

LET 2020 means something other than COVID. Work on your relationships and friendships you feel need some attention.

Dough made in bread maker on dough setting

3/4 cup milk 2/3rd cup butter 1 tsp salt 1/2 cup castor sugar 2 tbsp dry yeast 1/4 cup warm water & 1 tsp castor sugar 2 beaten eggs 3 1/2 cups plain white flour 1 - 2 tbsp sour cream ... optional .... I don't bother.

Heat milk until a skin starts to form. Remove from heat and add butter, salt & sugar. I add while still on heat as butter melts quicker. Cool till luke warm.

Put the yeast in warm water & add 1 tsp sugar. Wait for it to bubble then add to milk mixture. Also add beaten eggs.

This I put into breadmaker and add flour. Sometimes you need more flour cause it sticks to sides of pan. Add the sour cream if you want. Apparently is makes a lighter dough. This should be medium soft ... what ever that is.

After the dough has risen remove from pan put into a greased bowl and on top of something in a sinkful of hot water. I use an upside down colander. Let rest for 10 mins.

FILLING

1/2 - 3/4 lb of bacon finely chopped. 1 onion finely chopped I use bacon pieces and put them in a blender and chop till tiny. Same with onion. The finer the better in my opinion. Mix together with some pepper. I don't use salt as think the bacon is salty enough but recipe says salt as well.

I don't cook the filling altho the recipe says to saute in a frying pan until half the fat has melted and then drain off all but 1 tbsp. You can do either.

Pre heat oven to 400 deg F. I find this cooks the buns too quickly and burns them so I use about 350 and it depends of your oven.

I take out a couple of handfuls at a time to roll out on a floured surface. Dough stretches as you roll and shrinks back a bit. So takes a bit of rolling. Thinner is better for us as get more bacon flavor. I use a scone cutter but you can use something bigger is you want larger buns. Cut rolled dough into circles ... I put the left over dough back into the covered bowl.

Using an egg wash brush the outside edge of half the circle. Put approx. 1 tsp of filling on other half. Fold the dough over pinching the edges together. Floured fingers make it easier. Make sure the dough is sealed or filling will leak out.

Repeat with more dough, and repeat, repeat until all dough and filling is gone.

Put the buns onto a parchment lined tray. Now recipe says let rise again in a warm place until doubled in size. I don't bother. I just glaze them with the egg wash and cook in oven till golden. Again your call.

PHEW!!!!!!!!! Exhausted from the writing let alone the making of them on Wednesday.

If you make them I hope you find them as delicious as we do.

Thank you for that wonderful and touching post. It has encouraged me to share also, but on a much sadder note.

I would like to recommend to anyone reading this post to do a search on how to recognize a toxic person. I had to deal with one this summer, someone I thought I could trust. That person betrayed me in the most despicable manner imaginable, using my grief against me and costing me something that can never be replaced or regained. Please go do that search and educate yourselves. Don't let yourselves be put in the position I was, so lost in grief and remorse and loneliness that you spend your days in tears and suicide actually seems like a valid option. I survived, but I came so close to just giving up. Don't let that happen to you. If you have a person like that in your life, cast them out for your own sake. Such people are a cancer that you must excise from your life.
