Idk if I have a summer favorite dish. I personally love bbqs with my family and my go-to foods are Hebrew National Hot dogs... I do also love steak... And I love Dill Pickles.
But I'd eat those year round so it's not really summer foods.
But I guess one of my favorite summer dishes is the cake my mom makes for my birthday. It never turns out right but I'm gonna figure out how to make it turn out right. It's basically a yellow cake with strawberries on top and jello poured on top of the strawberries, but the jello usually soaks in because the cake is usually too warm and the jello hasn't set enough to lay on top. My mom used to make it once upon a time perfectly but the jello she used stopped being made and such. I'm sure one day I'll experiment with it enough to figure out the best way to make the jello stay. Might not help that the yellow cake is almost a sponge cake. But it still tastes great even if it doesn't look it. :P
My favorite summer dish is either a fresh vegetable platter or a mixture of watermelon balls and cantaloupe balls. I like to keep things cool for the summer. THanks for the giveaway!

One of my favorite summer (or anytime really) recipes, is strawberry pretzel salad. But for the 4th of July I like to get a little complicated! I wish I had a picture for you... basically, strawberry/blueberry pretzel salad American flag XD So it sort of combines this recipe, and this recipe with the technique of this recipe- They cut cake, I cut jello
You probably want to start by making sure your 8oz cream cheese is out and softened - I hate when I make something using softened cream cheese or butter and mine is still in the fridge... v_v I have no electric mixer so, yeah, fun times.
But once that is taken care of, you want to make the red JELLO, and mixing some frozen strawberries into it. (I don't know how using fresh affects this, I just know frozen makes a smooshy jam-like look/texture that I like rather than separate pieces of fruit in a jello bath) Set that aside to cool. Doing this first makes sure it isn't too hot to pour on top of the other layers. I don't do the blue jello yet because it would have to sit a long time while the red sets up.
Then you crush up about 2c pretzels - (don't make them all into a powder, you want the small chunks) mix with a little cinnamon and a few tablespoons of sugar stir that up with about 3/4c melted butter and flatten it out in a rectangular pan (9x13 is the common one I suppose) Bake that for about 10mins in a 350* oven and set aside to cool
Mix up your 8oz cream cheese until it's nice and blendable and combine it with at least an equal amount of whipped cream - (amount can vary to your liking of the consistency - for this flag version I might suggest a erring on the side of extra, even extra of both the cream cheese and whipped cream), 1/2c sugar (again, to your taste, depending on how sweet you like it), and 1/2tsp vanilla (I've also tried lemon juice here, not bad) Whip that all together and spread it over the cooled pretzel crust making sure to cover everywhere and seal the goop to the edges of the dish so there's nowhere for the jello to seep down.
Now here is where the unnecessarily complicated part starts to come in. (Why don't I just add a layer of whipped cream and draw the flag colors with the fruit on top? I don't know because I like to do things the hard way I guess.)
Now, you can keep it simple for a second, and just pour the strawberry jello mixture on top, and chill until Jello is firm. (Making the blue jello and mixing in the frozen blueberries here while you wait) Then come back and cut a square out of the strawberry section to remove just the jello so that you can pour the blueberry/jello mix in and refrigerate once more.
(Or if you have a couple cake smoothers or graham crackers something to stick in and keep the strawberry jello out when you first pour it, experimentation! - If you find a way like that to work, TELL ME PLEASE lol and in that case you could have made your blue jello already and pour it in the empty square now and let it all set up in the fridge at the same time)
(Alternatively, In the top corner where the blue part of the flag will be, add a ton of extra whipped cream layer so that when you pour in the strawberry jello layer, it will come up to the top of the white layer, but not cover it. Either way there will be extra filling and jello to be thrown together in a parfait fashion)
However you do it, you now have a big red rectangle with a small blue square in the top left corner. Here you can also decide if you want to just put whipped cream stripes, or if you want to cut out shallow stripes in the jello and fill in with the cream cheese filling. And then I put whipped cream dots for the stars.
SO delicious but yes, complicated if you want it to be. Or just make one of the regular jello pretzel salad recipes for delicious AND simple. XD

Let's see... while I do love smoothies year round, they're really amazing during the summer. I make quite a few, but I'll list one of my favorites: blueberry and banana smoothie. I don't keep exact numbers, but I can give an estimate of what I use.
Blueberry and Banana Smoothie
-A handful or two of blueberries -2 medium-sized, ripe bananas (chilled bananas are amazing for this) -1 cup of plain yogurt -A few drops of vanilla -A cup or so of plain, unsweetened soy milk -A few tablespoons of flax seeds
Blend everything together for about a minute. Then, it's done!
May I have a slot on the citrus and mud tresses please? :3
LEMON JUICE GRILLED CORN. I don't care if this makes it into the contest, but oh my god you have to try grilling an ear of corn, pouring a splash of lemon juice (not sugared) over it, and then adding salt and pepper to taste. Fav summer food. Had it in Greece once.

I cannot pick a favorite item. I adore this wig - it's perfect! The lil crab is adorable. The bg makes me want to live at the beach. Blue is my fave color and the design of this bathing suit is lovely. AND stars are FABULOUS. I needed to wear some star bling. 😀
I love cookouts during the summer! Have you ever tried brat burgers? They are delicious! and also regular brats. For sides, corn on the cob and potato salad! I don't have a recipe since I usually buy them in the store (not homemade lol) but those are my faves :)

My favorite is Khyar bi Leban, a lebanese cucumber salad that's been passed down our family! Honestly it's literally just 1 cucumber, 2-5 cloves of garlic (I use 5 cus I'm gross) salt and dried mint to taste, and 1-2 cups of yogurt, depending how big the cucumber is! Then you chill it overnight! It's really something you just do by eye, haha. It's so nice and fresh and delicious, I could eat it year round!
That quinoa dish sounds so yummy!!

I love to eat corn on the cob during the summer as well as zucchini and tomato dishes. I think fresh basil from the garden with fresh garden tomatoes are simply scrumptious!
Here is a new fave of mine . . .
Cucumber, Tomato, and Avocado Salad •1 English cucumber, sliced or chopped •4 Roma tomatoes, sliced or chopped •3 ripe avocados, sliced or chopped •½ red onion, sliced or chopped •¼ cup cilantro, chopped •Juice of 1 lemon •Salt and black pepper to taste •2 Tbsp. extra virgin olive oil
Directions:
Place cucumber, tomatoes, avocados, onion, and cilantro in a large salad bowl.
Toss with olive oil, lemon juice, salt, and pepper.
If you love corn on the cob, the lemon juice and pepper just makes it pop so much - and that salad also sounds delicious! Lemon and pepper 4 life.

My favourite summery dish is Lemon Posset :)
It's super easy and refreshing on warm summer days!
Ingredients
600ml/1 pint 1fl oz double cream
150g/5oz caster sugar
2 large lemons, zest and juice only
Method
For the posset, place the double cream and the sugar into a large pan over a low heat and bring to the boil slowly. Boil for three minutes, then remove from the heat and allow to cool.
Add the lemon juice and zest and whisk well.
Pour the lemon cream mixture into six large serving glasses and refrigerate for three hours.
Done! :D!
