I think Roseanne is one of those shows that was best enjoyed during its time. In the context of the other shows available at the time, it's fun. Watching it now may be a little painful. :p

I made chili this past weekend, and I've run out of freezer bags, so I was trying to use up some of the leftover chili. so I made "fake" enchilada's! lol have to admit. omg. it was SO good! lol used a ladle that has wholes iin the bottom, and would take out scoop full of chili, let it drain, put it on a tortilla (ha. I DID use a wheat tortilla) put cheese and some salsa on it, rolled it up, put it in a dish. did a couple of those, then took more juice (and some of the chili itself) spread it over top of the rolls, added more salsa and cheese and baked it in the oven for about 20/30 min.

my gracious. topped with sour cream and avocado, it was YUMMY!!! lol

now i'm sitting here going "eh, what do i fix today?" lol

think i'm going to just fix me noodles today. heh. broth, noodles, and dump in roasted veggies i have. lol easy and fast.

today is our free sandwhich day lol!! I need to do the dishes tonight too, I have been super lazy this week D: One enchilada 30 carbs ugh

I've never enjoyed Mexican food in restaurants because it contains cilantro (I have the gene that makes it taste like soap), and it wasn't something I had at home growing up. Honestly it never occurred to me until reading your posts that I could try making my own Mexican food at home, without cilantro! facepalm Because boy, what you made sounds delicious.

Thanks so much! Getting ready to head there now. I have glasses but I miss my contacts so bad. Hoping to get some this time around. It's been over a year or so since my last exam & my eyes have been bothering me a lot. But with my sinus & allergy problems it could just be that causing the issues. But an eye doctor I used to go to back home told me that my eyes just continue to get worse every time I would go for a check up. But the eye doctors I have gone to out here where I'm at now haven't been the greatest. Who knows... Guess we'll find out today!

Oh yes, if you read our posts we are ALMOST ALWAYS talking about food LOL isn't that right XD I cook at home all the time, I also just found that out about cilantro a few years back, it is legit one of my favorite things, I could just eat it and if I touch it I will be sniffing my hands for hours LOL I actually need to make stuffed plablanos they are in my fridge atm and need to make them before they go bad D:

Oh man it's so awful, and it's such an overpowering taste, too. Just a little bit in the meal and the whole thing is ruined. D: Anything calling for coriander has the same problem, since that's just the seeds of the same plant. I'm glad that you enjoy it, though! That means you can eat thai and vietnamese food as well.

well, i think the carbs was higher (or lower? nah) because like i said, i made "fake" ones. lol the whole wheat tortilla's i used, were special, "health" no everything, that my daughter found for me. and when i made my chili, i used all 'no salt' stuff (even though it WAS beef) but of course, i but the cheese and the salsa on it. heh.

any way. i'm doing really bad this week. my attitude hasn't been good this week. heh.

, lol I'm housebound (and OLD as Dirt. lol) and have found all these health problems this last year. so i've tried eating a lot more "healthy" (and FLYINGKAT is diabetic, which i've been diagnosed as 'pre')

any way. for the last couple of years, i've been eating a lot more fresh veggies. and i've noticed, that now when i get "fast food" every thing taste like it all has way to much salt, and the food isn't as good as what i make. lol

(even subway subs. i used to love their meatball subs. now it's like "wow. this is really sweet") heh

heh. , I've discovered, that the doctors, etc are really better in a "big city" usually. things that have happen to me, and similar things that have happen to a girl friend of mine, i lived near a big city, and she lives out in the boonies, things went Much better for me, than for her. same with other people i know.

hopefully you'll get a decent doctor this time around. even though i have heard, if the eyes keep getting worse, they won't give you contacts.

but what do i know? lol

FLYINGKAT, my girl just made pho noodles! i've been eating so many noodles lately, (heh. lately i've just been saying "asian noodles" because it usually whatever roasted veggies i have, kimchi, gochujang, and soy sauce) lol

Even more so because half the time you ask for those peppers they don't know what you are talking about! They name them different things at different stores -.- so frustrating
