I am a really good cook but can't bake without Duncan or Betty I'm ashamed to admit, It takes a lot more skill and almost super human timing, if you burn meat you can always sauce it to hide the fact, but if you mis-time a cake, your time's been wasted

What you say is true, there is more of an exactness required when baking. I often tweak recipes but I only do it after I understand why things are the way they are. For example, if I alter the protein concentration in a dough, then I know I must also adjust the fat concentration or there will be failure.

Also, if I don't measure things out correctly then things don't come together in a cohesive way. I have been baking long enough to be able to fix most problems and I adjust recipes based on the result I am seeing while mixing. Basically, I know the desired consistency and texture that I am looking for, so I'll add a little more of whatever it is I am missing.

I think it is similar to cooking in that you have to improvise, but the improvisation comes after spending enough time in practice to understand how to do it. I personally thing cooking taste a skill that many bakers lack. I feel a huge lack in the cooking arena simply because I tend to focus on baking. I do cook but I do not cook a broad variety. I am a vegetarian, so I never cook meat. I know how to prepare a whole chicken into its individual cuts, and how to gut fish, etc. but I often fail at cooking (except fish, which I think is really easy to cook). I made meatballs once and they totally fell apart. It was a hilarious disaster -- but I turned it into a really amazing red sauce.

Sorry that is a long response. lol XD In short I do envy the skill of cooks who can make anything - without a recipe. And also, the little green things were green mini MnM candies.

I am in the process of designing/planning a baby shower cake (with the mom-to-be) and toying with the idea of filling the center of the cake (after baking/layering) with some sort of yummy treat. IDK yet, I have to ask the person I am baking it for what she thinks.

Do you have thoughts on candy-treat filled cakes?

I would love to come for brunch! Your food always sounds divine ^_^ Hm.....the snow was pretty odd, that day. I am used to the softer, clumpier snow....this one seemed to attack everyone withe way it came down, almost like tiny darts. A lot of people got "stuck" in the snow trying to drive to the stores and the like, and had to shovel themselves out or get help. One of the fellow employee's cars was getting buried in the target parking lot. Even 2 days after the storm, a lot of the roads were still a touch too covered for comfort, and there was someone on the road leading away from the mall that got stuck. There wasn't as much snow and ice there as the other roads, so my Dad surmised that the person was speeding, so his wheels spun a bit out of control. Unfortunately, the car blocked that road for quite some time....at least over 30 minutes to an hour, since some people that were shopping told me they saw it as well, and I talked to them a few hours later.

Hm.....some places got up to 24 inches, and NY mayor (or governor? I cannot remember) declared a State of Emergency. Mind you, I live in NJ, but it was around that height for us as well. A lot of people that managed to shovel out their driveways got plowed right back in XP Many streets weren't plowed at all.

, OMG! I have some wheat penne and i made some marianara sauce too! I'm fixing it that way today! hahahaaa i was really bad. i didn't fix any thing else with it. I munched on 1 of them, and then i ate one of the calzonie fake things i made. (left over stuffing from the chicken, pepporoni's, tons of mozerella wrapped in pizza dough) with the sauce i made. and that was it yesterday. grin. hey! there was spinich in the cheese stuffing i made! :D

:( i put jalepeno's in 2 of the chicken wraps, for the man. but it doesn't look like he's going to even eat them, i'm going to try one of them today, and i hope to god, that i didn't put a lot of the peppers in it, because i don't like jaleopeno's all that much. any way. with the penne and sauce I have high hopes it's going to be SO Yummy! :D

Meatballs are bloody HARD! Not only do they have to taste amazing, but they have to be able to maintain their structural integrity in the sauce, so its kind of a balancing act, too much handling and they're tough, too little and you'll end up with a Bolognese sauce rather than pasta with meatballs/ My Mom made the best meatballs I've ever tasted and when she died there was a MAD hunt for that recipe but there wasn't one, I've come close to it but not quite as good or as juicy. Fish can be tricky and seafood in general, overcooked shrimp is tough and stringy, undercooked will make you sick. Being a Vegitarian, do you still eat fish and seafood? Do you have a preferred way to do it?

And the roads still hadn't been ploughed...if NYC was in a state of emergency it snows ut its rare when its cold enough not to melt because of that thermal layer from the ocean, ploughs may have been redirected to NY. Your Dad's speeding theory sounds right, but the speeder is an imbecille, even if Popo was distracted with helping during the emergency and may not have the time to whip out the radar gun to clock a speeder and pull them over, there are other and much worse consequences than a speeding ticket. Maybe he was from out of state and just not used to driving in inclimate weather. He's still a twit, however.

That sounds really, really good and I LOVE spinach with Mozzerella or gorgonzola! Jalapeno can be kind of overpowering, maybe some diced peppercini or banana pepper instead, it will give the calzone a little extra zing but you'll be able to taste the other things instead of HOT!

shakes head Meatballs, so far the have me beat. I can make them taste good but thy fall apart when I cook them. I think it has to do with not using enough binder because I never use the eggs.

It is really unfortunate, that you could not find your moms meatball recipe. I can understand how that is because when my grandmother passed away, my mom made sure to get specific recipes from her book. I bet your mom was, what we call in my family, a dump cook. Meaning that she just cooked by taste and feel, never measuring ingredients or following a recipe. My mom and I cook that way, though about half the time I do kind of follow a general recipe. I do not bake in the aforementioned way though. lol XD Do you think that is why you couldn't find your moms meatball recipe, because it was never actually written down in the first place?

I do not eat any meat, though I have had a pescetarian (fish eating vegetarian) friend. I could never figure out how she could eat the fish; to me fish is simply disgusting. I've only ever enjoyed it one way: fresh caught trout my grandpa brought home when I was a young child.

Everyone in my family eats meat, so that is why I have learned to cook it. I only became a vegetarian when I was about 8 years old.

I think they should let you pick which piece you want, regardless of how you pay. I mean we're giving you money and you're making us give away more of our banking info to another service just to get a virtual item?

and HABEEBI, I would have LOVED to get my grandmothers recipes, but omg, that side of the family was like locusts. the only reason i got what i DID get, was because she gave me stuff BEFORE she passed. (like her iron skillet, and a pitcher that was HER mothers /my Great Grandmother)

I hate it when families act crazy after the passing of a parent or similar type relative. That happened when my maternal grandfather passed - the extended family (one of my uncles and his fam) went insane and plundered (i kid you not) the house. My poor mom was left speechless and so shocked/sad by what her brother had done.

I would use eggs in my meatballs but I have family members who are allergic. I try to avoid cooking with things that might cause allergic reactions.
