The skins, maybe ? My grandma can't have the skins and so a lot of juices are out.

Cooking fruits and vegetables activates and deactivates certain proteins at different temperatures. That's why someone can be allergic to one form of food and not another.

For example I'm allergic to frozen peas, but not canned peas because they are processed at different temperatures. I haven't tested raw peas though.

There are many cases of people allergic to the raw from, but not the cooked form, or vice versa. Its actually quite fascinating. As mentioned you can also be allergic to different parts of the plant. I'm allergic to cilantro (leaves) and while I didn't react to coriander (seeds) my allergist said I should avoid both, probably because of cross contamination.

Oh, hers is super strange but we just avoid giving her stuff with apple juice. She can eat full apples (skin and all), cooked or raw, with no issue. But juice/cider makes her arm tingle and go numb. And it's not just like...the store stuff with additives. I fresh pressed apple juice with no additives and she still couldn't drink it. Alcohol makes her feel exactly the same so she doesn't drink.

I was going to say it could be due to the fruit fermenting (not enough to create a significant amount of alcohol), but I don't think fresh juice would do that.

The only other thing I can think of is that the seeds press too and maybe since there's so many, it's releasing just enough of the amygdalin (cyanide) to bother her - like, maybe she's especially sensitive to it or something. Or, like Lypsyl said, even a bit of alcoholic properties even with it being fresh pressed.

We've never noticed a reaction to real vanilla extract (and it's been in lots of things we've made - both baked and 'raw'). It's pretty much only apple in juice/cider form. It's gotta be something that doesn't normally react with her but comes out when pressed.
