I'm so confused, how are you getting money back? But either way, that's awesome! And YAY for not having to worry about wedding expenses!

She didn't quite explain it all, just basically that the numbers came in lower than expected, I am assuming the costs for the lawyers/paperwork as well as the insurance. I know she estimated $1500 for the homeowners and its only going to be $1070 for example. She had already told me I'd probably get like $300ish back before this, so its just a bigger amount. I finance a certain amount, they pay a certain amount for paying off the other mortgage, they pay a certain amount for new escrow for the insurance/property taxes and a certain amount for the lawyers, and it was all estimated. Now I guess its being finalized....

Dinner is rescued. I can microwave it for 5mins and then bake it for 30 instead of baking for an hour. Hopefully Nathan isn't home right at 630 lol. The oven isn't quite hot, but I popped it in there anyway to start baking. Ehhhhh bad me.

Edit: Oooh wow. With the new numbers, my monthly payment dropped!! Its only going to be $510!! (It was estimated to be $545, and I have been paying $645, and it just upped to $670 for the month of April with the old mortgage).

Good shout Kat, I missed the edit! Yay on getting a little extra cash on hand, that's always nice! :D

That does remind me I will need to call my bank up about the safety deposit for the former flat. Landlord has cleared it so we should get back the whole thing but it's stuck at the bank currently and I don't fully understand why. Annoying, but hopefully it will also result in some extra cash on hand once I get it done :P can't be more than a couple additional administrative hurdles... I hope.

Have a nice dinner! And I do like we're united in hating dishes haha. I need to go to bed pronto, chat with y'all tomorrow <3

I asked Nathan to see if he could hold off his break an extra 15min to let it completely cook, and he could, so yay. Dinner is definately rescued!! :P

I need to gather all my lesson plan "directions" for small groups and stuff, and take pix, and then upload that and a few other pix I just got from my lead teacher, and finish that bit I was working on, and then be DONE with that assignment. I bet I have it done by the end of the weekend (if I can find enough materials from lesson plans/small groups - I left some of it at school but some is home.)

Glad dinner worked out! And hopefully you can finish that assignment on the weekend, it's always nice to tick off a to do.

Yawn! Rolled out of bed today, a bit late if you ask my cat, she was impatient to get fed. I need to wrangle my sleep schedule a bit, it's just a long weekend but the temptation to treat it like vacation that will go on FOREVER is too real and my resolve to get to bed at my actual bedtime too weak atm.

The other day a friend of mine said she'd never had mochi before so I was planning to invite her over, and we can visit the nearby Japanese store and get some mochi to snack on together over tea. All I really need to do for that now is to ask what days work for her. The Japanese store has the best ice cream mochi I've ever tasted (I had the green tea ones before). Yum. And unrelated, but my husband really likes cheesecake, so I'm thinking it might be fun to try make one for us to share!

I don't think I've ever had mochi either. My daughter probably has though :P And I LOVE cheesecake. Strawberry or Raspberry are good, Chocolate/Turtle is the best hahaha :P I buy premade slices at walmart mostly, in the bakery. I used to make the jello cheesecake all the time, but the lastl time I tried, it didn't taste right. I've never ever used cream cheese to make one, or baked one in the oven. Nope. Never. And now I'm too lazy to try. Not when I can just buy a few slices. I'd never eat the entire thing anyway, if I made one.

YES! I am so ready to be done with this final assignment. It isn't due for two more weeks, but hey! If I get it done, I have NOTHING to do but go to work and log hours for the rest of the month. And then college is done, and graduation happens. :P

Shocking - I was out of bed late myself. I got woke up by the dog at like 3am or something, finally fell back asleep. Woke up around 545 thanks to my NEIGHBORS dog, who was setting off the camera - I have do not disturb set from 10pm to 530am, and he was outside this morning sigh (NOT the neighbor I play cards/games with, but the other one). I didn't actually get OUT of bed until 630 though!! I scrolled on my phone and laid there.

But now I'm up! And ready to quest.

... I slept until 7:40. Though I did take Nyquil before bed last night.. I've got a weird cough that I don't want to settle into my chest completely, you know?

Got up, we ate scrapple for breakfast (I don't like to think aobut the ingredients, but it IS yummy. And full of iron!)... and then made the cheesecake. I took my regular recipe, divided it in half and added melted chocolate and cream to one half, and peanut butter to the other, then swirled them together. We'll see how it turns out?

It's quite easy to make them in the pie crust because there's no water bath! It's 2 things of cream cheese, 1/2c sour cream, 1/2c sugar, a little vanilla, a little salt, two eggs, and whatever else you want to add to it! Mix the cream cheese and sugar together, then the vanilla and salt, then the eggs one at a time until just mixed. Bake at 325 for half an hour or until the middle is still a bit jiggly :P

And now El is dusting and Iz picked up the house a bit more and then they'll sweep and hten we're DONE.

Oh, and I did laundry?

Graham cracker pie crust (do you make your own or buy a store one)? or like, frozen, pumpkin pie type pie crust?? I've always used graham cracker crusts for jello cheesecake. Not sure whats on the bakery ones lol It doesnt seem quite like regular graham cracker crusts. I might have to try it. See how it turns out and if I like it. I like the idea of swirled chocolate and swirled peanut butter is a maybe ....

I need to put my laundry away. I did go grocery shopping with Shane. Picked up more meat than I planned, but I NEVER skip over buying my boneless beef ribs when I find them, and they had a beef package for 7.48 a lb that included two chuck type steaks, a pot roast and some denver type steaks. So yum. Didn't pass that up either.

I wrote down your recipe. I am assuming, softened (room temp-ish) cream cheese, not right out of the fridge? :P I'll have to give it a try. Never thought there'd be sour cream in it...I don't use that for anything. Is it absolutely required? I'd hate to buy some, barely use any and then trash the rest....

They moved out during hte summer, but yes, here for Easter haha. Came over yesterday (and bought dinner!). :P

I mean.. not absolutely, but you can tell if you don't use it.

Maybe my neighbor could use the rest for something.... I use muffin mix for muffins lol except when I do banana bread muffins....because then I just make banana bread recipe and make mini muffins instead of a loaf.

I probably wouldn't be able to tell if I didn't use it, as I've never made one :P ??? LOL

Yes, I saw you said she brought dinner. But when you said she was helping clean, I was like hmmm... LOL

I need to clean again. Vacuum, sweep, clean off the table. Etc. Fun Fun Fun. I want to have all the house tidied, and all the trash taken OUT of the house/off to the dump before we go out of town. Just so I don't have to worry about Belle getting into it. We decided to leave her inside, and the neighbor will take her out into the pen in the mornings (maybe leave her out in the pen) and leave her inside at night. Because while I was going to leave her on the runner line, my neighbor was worried about taking her inside to feed her (she won't eat outside now, and ants get into the food if we leave it outside), because Belle PULLS on the leash, HARD to get inside when she's been out for a while on the runner line.

I'm going to close all the doors in the house except the middle room where the litter box is, (and my room as its the outside exit to the dog pen) and hope Belle doesn't break the gate while I'm gone too :P I'll have to make sure the neighbor remembers to latch the gate when she leaves Belle inside. I thought about shutting mama in that room, but that feels mean.

It's not very.. cheesecake-y.. without it.

I buy the one cup sized sour cream at the grocery store, enough to make two things with, and it lasts for a few months in the fridge.

actually, this one I have now, I bought to.. make muffins with :P

Oh hmmm, I never use the muffin mixes. Are they good?!

Poor Belle. and poor neighbor! Leaving her inside for the most part sounds like a good plan for everyone involved!

And yeah, I'd definitely want the trash out.. and anything she could get into, because even if she DOESN'T normally, she may if she gets bored?

I edited a little.

Yeah. I like them. I make regular muffins and mini ones from them. They're quick and easy. I get Martha White brand mostly, but will get whatever else is cheap - the bags that make 6 muffins and you add 1/2 cup of milk. I usually get the chocolate chip and choco choco chip, plus sometimes the strawberry cheesecake, strawberry, wild berry and occasionally the banana.

Shanes going to steal my computer and do his taxes. See you in a while (maybe) :P

edit: Ok I am back. Shane was able to put in all but one of his W2's. That one has income tax taken out in the state box, but no state employer ID number. So he has to contact the employer, who of course won't answer the phones on the weekend. :P

oooh. Yeah, I've seen them on the dollar tree dinners page.

However I think I'd need to make 4 packs of them at a time.. at least haha. They'll eat 2 muffins while deciding what to eat..

Hahaha. I eat two muffins. But then I'm stuffed. And I should only eat one. Nathan will eat two or three, if he eats any at all. Usually I have at least 2 left over, and eat them the next day or so.

Well I bribed Nathan with Zaxbys for lunch if he took the trash off, so he's taking the trash off LOL And then tomorrow I am going to see if I can get him to help me move the sofa and mattress frames into the back house and out of the yard. Oh excuse me.... according to the appraiser ... I will be moving them into the "shop". :P I have a shop now ya'll. Not a back house. Not a storage shed. Not a whatever you wanna call it. A shop. giggles

Shanes taxes are biting him in the butt. He owes. I had a feeling he would. He did a "owner operator" for like a month (again) and has no record of any of the expenses to help him offset the "income" they say he earned. They're saying they paid him $16,000 - yet we KNOW he didn't get that kind of $ from them, because they took out truck payments, fuel payments etc. But he says he can't find his records of that. Well, you idiot, you are screwed if you don't find it.

The back house will still be the back house to me. I've called it that for 20 years, it won't change now that its labelled a shop LOL It was the original house on the property before my house and the one next door were built. Then the properties got divided and sold separately during the company and then personal bankruptcy from the people we were renting from. Our part of the property included the original house - its behind my house, thus it is the "back house" :P
