Basically the entire The Princess Bride movie is full of great quotes, but I'll pick just one.

Vizzini: HE DIDN'T FALL? INCONCEIVABLE.

Inigo Montoya: You keep using that word. I do not think it means what you think it means.

My favourite quotes are from Le Fabuleux Destin d'Amélie Poulain, mostly because they related a lot to my teenage self when I first watched the movie in my high school French class..

I had started to type out the quotes I like best in the original French because that's the version I like to memorize most (even though I can't actually follow the entire movie in french without subtitles yet), but then I realized the subeta forums are english-only and I don't want to get a warning for quoting a movie :')... but I don't really know how to translate one of the quotes into english properly.. the version I can find online is (in my opinion) badly paraphrased :/...

I can find a proper translation for the other one though, it's probably also the most popular and often quoted one: "The times are hard for dreamers".

I'll try to translate the other one I like a lot a bit more literally myself: "If Amélie prefers to live in a dream-world and remain an introverted girl, that's her right. Because messing up one's life is an inalienable right." (I usually preferred leaving out the last part, though :')) I think a big reason why they were both so relatable to me at the time was because I didn't know yet back then that I'm autistic and have adhd (both went undiagnosed for a very long time) and I'd been living in my own "little world" for the majority of my childhood and teens (and to a certain extent, still kinda do), so a lot of Amélie's weird quirks and avoidant tendencies really hit home for me..

So hard to pick just one quote. I think I'm going to go with one of my favorites from Army of Darkness (please excuse the mildy adult language):
