This was one of my favourites for years: whole chicken, cut up. Place in a baking dish, add 1/2 cup water. Sprinkle with onion soup mix. Bake in over at 350 for about 40 minutes. Turn over pieces of chicken, sprinkle with onion soup mix again, bake another 30 minutes.

Best Breakfast Recipe Ever
German Apple Pancake
(from the Vegetarian Epicure)
Pancake: 3 large eggs 3/4 c milk 3/4 c white flour 1/2 tsp salt 1-1/2 Tbs butter 1/2 cup thin-sliced apples (optional)
Filling: 1 lb tart, fresh apples 1/2 c melted butter 1/2 c sugar cinnamon and nutmeg
Topping: 2 Tbs melted butter (optional) powdered sugar
Preheat the oven to 450 degrees. Beat together the eggs, milk, flour and salt until very smooth. Add some sliced apples if desired. In a heavy 12 inch pan, melt the 1-1/2 T butter. Pour in the batter and put pan into oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
During the first 10 or 15 minutes of baking, the pancake might puff up in large bubbles. If it does, pierce it throroughly with a fork.
While the pancake is baking, prepare the apple filling. Peel and thinly slice the pound of apples. Sauté them in the melted butter and sugar. season to taste with the cinnamon and nutmeg. The apples should be just slightly tender-not mushy.
When the pancake is ready, slide it onto an oval platter, pour the apples over one side and then fold the other side over. Pour melted butter over this and sprinkle on a bit of powdered sugar if you like.
I've also made this without the apples - just served it drizzled with butter and lemon juice and sprinkled with powdered sugar. Though this usually ends up as breakfast, I've made it for dinner a couple times and have even managed on rare occasions to share it with others for dessert.

Ingredients
SALAD:
1 pint grape tomatoes
1 ripe avocado
2 ears fresh sweet corn
2 tablespoons fresh cilantro, chopped
HONEY LIME DRESSING:
Juice of 1 lime
3 tablespoons vegetable oil
1 tablespoon honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash cayenne pepper
Directions
Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy.
Set aside and let cool.
Slice the tomatoes in half, dice the avocado and chop the cilantro.
Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated.
Be careful not to mash the avocados.
Let the salad sit for 10-15 minutes to let flavors mingle.
HONEY LIME DRESSING: Add all the dressing ingredients in a small bowl and whisk to combine.
Set aside.
Combine the salad and dressing together and Enjoy!
(Last time I made it I just used canned corn, even easier)

- Something quick and easy...
In a baking dish crumble some tortilla chips, add a layer of cooked chicken and some enchilada sauce...add another layer of crumbled chips chicken and sauce...another layer of chicken, chips and sauce and grated cheese on top. Bake 35 minutes at 350. We sometimes add sliced olives or chopped tomato and used either cheddar or jack cheese...if you are short on time this is something quick especially if you have leftover chicken already in the refrigerator.

Chocolate wafer log
Ingredients 2 cups whipping cream 1 tsp. vanilla 1 pkg. chocolate wafers
Instructions Beat cream with mixer on high speed until stiff peaks form. Gently stir in vanilla. Spread 1-1/2 tsp. whipped cream onto each wafer; stack, then stand on edge on platter. Frost with remaining whipped cream. Refrigerate 4 hours. Cut into diagonal slices to serve.
The hardest part of this recipe is waiting! It was one of my go-to recipes for potlucks.
