yah, the man and his bro-n-law (after they killed the coyote) had to drag it out of the field. he said, because they had been getting into the garbage around the different farms, etc, that they stunk REALLY badly.

ok, kristin, I told you and , how i didn't have that tamarine sauce (how ever you spell it) and what i DID have little "bits" of left over stuff

I took some of the oil that i had my garlic, sitting in (you know i roast tomatoes and garlic, like every week. along with whatever veggies the man might bring home to me) and i always use "extra" EVOO for the tomatoes and garlic (and save it, because it makes an Excellent "back up meal i don't feel like making anything but i'm hungry and i want something quick" meal, just toss the oil, whatever noodles, and some of the roasted garlic and tomatoes. boom. meal) so any way

i put some of that oil in the pan, added about 2 tablespoons of butter, melted and almost brown, added some sage leaves, and let them "toast up" then i had a leek, so i chopped it up, and added that (after taking out the leaves) and a GALLUP (maybe a quarter, to a half cup) of white wine to geet the 'fond' off the bottom (the 'brown bits') let it cook down added the shrimp.

(break. step-mom called, had to talk on phone) lol

so. let's see, added the shrimp (i'm telling you step by step, so i can remember, in case i want to do this again!)

let that cook a couple of minutes, then added the teeny bit of sauce i had left (has zucchini and squash) i really didn't think it had enough tomatoes, (and really. not much sauce at all) and i didn't want to open a can of diced tomatoes.

then i remember, i still had some roasted tomatoes left! so i added all those! added the cooked tortellini (and a little cooking water)

and OMG!!! IT'S SO DAMN GOOD!!! and I SWEAR it took less than 30min to make it!!!

top with cheese and crunch sage leaves! lol i'm going to put a picture up on instagram, it's so pretty :D

(oh. added some parsley and red pepper flakes also)

ok. now. after all that. I'M GOING TO GO AND EAT! hahahaaaaaaa

for tamarind... it's a citrus. So you can use citrus zest plus juice (or vinegar) like... zest of 1 lime (or lemon or orange or tangerine etc) plus 1 tbsp of vinegar or lemon or lime juice for 1 tbsp of tamarind... it's not identical but it's just as good I think.
