I'd have to bite my tongue also if she'd had been there in person. Still, I can't stand customers who are like that. If the cashier or someone else says Merry Christmas first, I normally say that back to them. Most of the time I say Happy Holidays because like you mentioned, they may or may not celebrate the holidays.
