Have you ever tried candied pumpkin seeds? It's sort of a tex-mex spicy sweet uber-tasty treat
Melt 2 tablespoons unsalted butter in a heavy saucepan over moderate heat. Stir in 2 tablespoons sugar, 1/4 teaspoon ground cumin, 1/2 teaspoon cinnamon, 1/4 teaspoon paprika, 1/4 teaspoon cayenne, and 1/4 teaspoon salt, then cook, without stirring, until caramelized. Add 1/2 cup raw pumpkin seeds and cook, stirring occasionally, until seeds are puffed and golden. Transfer to a plate to cool. When seeds have hardened, break up any clumps with your fingers.
That sounds intriguing...I've not much tolerance for spice myself, but I still kind of want to try it. People I live with have a decent tolerance, anyway, and they might really like it.

My neighbor gave me a few of her dia de los muertos recipes. Most of them are really sweet, so the spicy seeds add contrast, but you can leave out the cayenne and they are still really tasty.
As long as we're talking food..., take all the meat you cut out from the pumpkin for the eyes mouth and whatever. Peel the skin off and chop with apple chunks, raisins, a good handful of brown sugar, and half a cube or so of butter (more or less depending on how much pumpkin you have). Bake at around 375f for 20 minutes or until sugar is molton and the apple slices are soft. Serve hot with a glob of vanilla ice cream and a dash of allspice. for adults a jigger of dark rum is a tasty option.

Has anyone ever made pumpkin pie from scratch (filling not crust) and do you have any advice/recipes? I don't mess with anything other than the Libby's recipe because it makes perfect pumpkin pie, but I figure I should try to make a homemade one since I'll be entering the carving contest anyway. I have yet to find a scratch recipe I like as well as the canned. But here's my gram's recipe,
Peel, halve and seed a 2 1/2- to 3-pound sweet pumpkin (the little round ones) and cut flesh into 1 1/2-inch chunks. Coat with melted butter or oil and roast at 400 degrees, stirring once or twice, until the flesh is tender, about 30 to 45 minutes. Let cool, then purée in a food processor.
INGREDIENTS: 1 3/4 cups pumpkin purée 3 large eggs 1 cup heavy cream 3/4 cup dark brown sugar 2 tablespoons brandy 2 teaspoons ground ginger 1 1/2 teaspoons ground cinnamon 1/2 teaspoon salt 1/4 teaspoon grated nutmeg Pinch ground clove
Lower oven temperature to 325 degrees. In a large bowl, whisk together the pumpkin purée, eggs, cream, dark brown sugar, brandy, ginger, cinnamon, 1/2 teaspoon salt, the nutmeg and clove. Pour mixture into the cooled pie shell. Transfer pie to a large baking sheet. Bake until crust is golden and center jiggles just slightly when shaken, 50 to 60 minutes. Cool completely before serving.

Hi NB... I'm glad to see this chat too. My Subeta playing goes in spurts & I am out of the loops always. I don't even know what to do with a raffle ticket if I found one. I'd love to carve a pumpkin as well... just have some pretty lame pumpkin carving skills. I very rarely post in the forums, because I don't really know too many people... so it's like being in a party full of strangers...with something hanging out of your nose. :P
