I guess you could create a zapper pet specifically to zap for the minions but that could be hard depending on how many pet slots you have.

If you manage to get any of the new minions, you get to keep them, they remain as they are even when taken off the pet.
The chances of zapping my pet, having my minion zapped and turning into the one I want of these instead of just disappearing or something is extremely slim. Oh and can we keep the minion after it's zapped into something or does it revert back after removing it?

Not deliberately. Sometimes the zapper misses and hits the minion so you have to have the chance of that happening on top of the chance of getting the minion zap you want.
