Ohhh mocktails! 👀 We don't really drink, so my festive mood depends on equally festive virgin cocktails xD
Festive Rosemary Mocktail

for the syrup 1/2 cup water 1/4 cup maple syrup 2 sprigs rosemary
for the drink 2 cups carbonated water 2 cups cranberry juice juice from 1 lime ice cubes (you can freeze them with cranberries and rosemary needles for more fancy)
make the syrup Add water, maple syrup and rosemary sprigs to a small pan. Bring to a boil, then reduce the heat and simmer for about 5 minutes. Remove the sprigs. Let it cool off.
make the drink Fill a cocktail shaker halfway with ice. Pour the rosemary syrup and lime juice on top. Shake. Fill 4 glasses with ice. Pour the shaken mixture on top. Top with equal parts of carbonated water and cranberry juice. Decorate with frozen or fresh cranberries and fresh rosemary.
short on time When I'm in a hurry (or make drinks for diabetic family members who should watch their sugar intake), I cook some winter-y fruit tea and let it infuse with rosemary sprigs, lime wedges and slightly squished cranberries.
The Grinch Punch

Ingredients
2 packets Unsweetened Lemon-Lime Kool-Aid (.13 oz)
2 Cups Sugar
1 Can Pineapple Juice (12 oz. can)
1 Can Frozen Lemonade Concentrate, thawed (12 oz. can)
1/2 liter of Sprite
Ice
Red Sanding Sugar for Glass Trim
Instructions
1. Pour 2 quarts of water in a 1 gallon pitcher.
2. Add the Kool-aid mix and sugar and stir until the sugar is dissolved.
3. Add the pineapple juice and lemonade and stir well.
4. To top the rim of a glass, dip the top in water then dip into the sanding sugar.
5. Just before serving, add the Sprite and ice to the pitcher.
6. Carefully pour the Grinch punch into the glasses dipped in the red sanding sugar.
7. Serve and Enjoy!
Simple syrup:
1/2 cup each unsweetened cranberry and unsweetened pomegranate juice
1 cup sugar (or baking sugar alternative)
in a saucepan, add all ingredients and stir over medium-high heat until boiling. Boil for 5 minutes. I might turn the heat down, but only to medium - as long as it's still bubbly. Keep stirring! After sugar is totally dissolved pour into heat-safe glass and store in refrigerator. This will keep for a while, if you want.
Bellini (alcoholic is just as easy, prosecco or champagne instead of seltzer) 1 oz syrup in champagne flute (or any glass up to 10oz size [300ml] - small tumblers or highball glasses work great!) 4-5 oz seltzer (plain!) (let's be honest, I'd just fill to desired strength) squeeze of lime if you want to bitter it a little, but it's optional garnish with a cranberry (they float!) or a cherry for an adult who likes cherries! LOL You can also use the lime or a sprig of rosemary (as pictured) as garnish for a red/green component
Frosty's Nose Mocktail

Ingredients 3 cups freshly squeezed orange juice 3 cups apple cider 2 oranges, thinly sliced 1 lime, thinly sliced 4 (3 inch) cinnamon sticks 8 whole cloves 1 star anise 2 tablespoons honey
Directions Combine orange juice, apple cider, orange slices, lime slices, cinnamon sticks, cloves, and star anise in a large saucepan. Bring to a boil over medium-high heat, about 5 minutes. Reduce heat to low, cover, and simmer for 10 minutes. Remove cinnamon sticks, cloves, and star anise. Stir in honey and keep warm. Pour warm cider into cups and garnish with a cinnamon stick for stirring and several orange and lime slices. Cook's Note: If you're serving a large crowd, feel free to scale up the recipe, and keep warm in a slow cooker for guests to serve themselves.

INGREDIENTS
(* = alterations from the lady's orignal recipe for those who aren't vegan or vegetarian)
360 ml (12 oz) of plant-based milk: use your favourite plant-based milk here like oat, almond, coconut or rice milk.
2 tablespoons of Speculoos cookie butter: this adds a warming, cookie-like flavour packed with festive spices. You can use Biscoff, Speculoos or other cookie butter, or you can also use almond butter or tahini.
2 tablespoons of cocoa powder: for a rich chocolatey flavour. You can use cocoa or cacao powder here or 100% raw cocoa/cacao without added sugars.
1 tablespoons of maple syrup: for a little sweetness. If you prefer your drink sweeter or are giving this to children, you can add more maple syrup, to taste.
1 teaspoon of vanilla essence.
Gingerbread spices: 1/2 teaspoon of ground ginger, 1/2 teaspoon of cinnamon, A pinch of mixed spice A pinch of nutmeg.
INSTRUCTIONS
Add the ingredients to a blender and process till smooth.
Add some ice to the shaker and fill it about 1/2 (half) way.
Add the drink mixture into the shaker, filling it about 1/2 (half) way.
Give it a really good shake, to cool down the drink.
Strain the drink into glasses and continue to use all the drink mixture.
Top the gingerbread creation with some whipped cream and cookies.
INSTRUCTIONS FOR CHOCOLATE RIMMED GLASSES
Melt some dark chocolate and place into a shallow bowl.
Crush some cookies very small and place in a second shallow bowl.
Take a glass and dip the rim into the chocolate and allow the excess to drip off.
Now dip the glass into the cookie crumbs and shake away an excess.
Tip the glass back upright and chill in the fridge for 10 minutes.
EXTRA WAYS TO SERVE THIS DRINK
Additional Ice cubes
Dairy-free whipped cream: you can find this in most supermarkets, and you can either buy one from the squirty tin or use tinned Natures Charm oat or coconut whipping cream and whip it up.
Gingerbread cookies: make a batch of vegan gingerbread cookies (from a vegan gingerbread recipe of your choice) and add them on top. Make them fairly small so they sit on top of the whipped cream.
Extra Speculoos cookie butter.
Sprinkles: to make this feel more festive and fun.

Directions: Build all ingredients in a shaker and shake well. Strain into a Collins glass and top with soda water.

Directions: Boil all ingredients while whisking periodically. Let simmer then strain through a chinois (or a fine strainer). Let cool.

Cranberry-Ginger Shrub

Ingredients: 1 (16-oz.) bag cranberries 1 c. cider vinegar 1/2 c. water 1/2 c. sugar 1 (1 1/2-inch) piece peeled and sliced fresh ginger 2 cinnamon sticks Ice and club soda, for serving
Directions: Step 1 Combine cranberries, vinegar, water, sugar, ginger, and cinnamon in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat and simmer until berries start to break down, 10 to 15 minutes; cool completely. Strain through a fine wire- mesh strainer, mashing mixture to release liquid; discard solids and chill. To serve, pour 1 oz. over ice and top with club soda.
Pear & rose punch

Ingredients
1l pear juice
1 vanilla pod
1 tbsp golden caster sugar
4 cardamom pods
few slices root ginger
25ml raw apple cider vinegar
½ tsp rosewater
250ml sparkling water
ice
For the garnish
rosemary sprigs
thyme, leaves picked
sliced red pear
handful frozen redcurrants
Method
STEP 1
Pour the pear juice into a large pan. Add the vanilla pod, golden caster sugar, cardamom pods and root ginger, then bring to a simmer. Leave to cool completely, then strain into a punch bowl or jug.
STEP 2
Add the raw apple cider vinegar, rosewater and sparkling water. Garnish with rosemary sprigs, thyme, sliced red pear and a handful of frozen redcurrants. Add ice and serve.

Combine ½ cup flavored water with 1 ½ – 2 tablespoons grenadine, to taste.
Fill with ice and stir gently then add the candy cane and serve!

Virgin Cranberry Mojitos

Ingredients: Sparkling Lime Water Cranberry Juice 1 Teaspoons Sugar 20 Mint Leaves 2 Tablespoons Lime Juice Fresh Cranberries, optional garnish Lime Slices, optional garnish Mint Leaves, optional garnish
Instructions:
INGREDIENTS:
2 oranges, sliced 2 grapefruits, sliced 1 cup cranberries 16 oz pomegranate juice 1 cup orange juice 2 chai tea bags 2, 12 oz cans grapefruit flavored sparkling water (I used LaCroix) garnish: anise stars, cinnamon sticks, fresh cranberries
DIRECTIONS: Preheat oven to 400ºF. On a baking sheet, place sliced oranges, sliced grapefruit and cranberries. Bake for 30-40 minutes, or until cranberries burst and caramelize a bit. Meanwhile, boil pomegranate juice and orange juice. Once boiling, pour over chai tea bag. Steep for 5 minutes. Remove tea bags. Add in caramelized fruit and let sit in the fridge for at least 2 hours or overnight. Fill a glass half full of the sangria mix and fill the rest of the glass with grapefruit sparkling water. Garnish with anise stars, cinnamon sticks and fresh cranberries.
