😰 There may be another answer here... which is very embarrassing for me.
When I rewrote the shop stocking system, I implemented a system for "time outs" for items that sat in the shop for a long time, making them no longer restock over the course of a week until their time out ended.
It seems like at some point I modified that to always be eligible for restocks, not taking those timeouts into account.
I've just re-enabled it (with a code comment as well) because I don't really remember the reason I did that in the first place. So, we'll see over the next 24 hours how that effects the shops and maybe make some tweaks from there (or realize why I turned it off in the first place and do it again 🤣)

Yes, with less overall items to stock the amount of time between restocks will go up.
Hah, that was a different little parameter I tweaked that I didn't remember ;) Just switched that back too, will update the status page (and try to be better about keeping it updated, I've got help now!)
