I can do this in my legacy shop but when I try to sort by stack size in my new shop, it just sorts ALL my items instead of within my search of "elixirs" or what have you.

I'm assuming this is broken and not the way it is supposed to be because it worked in the old system but now only functions as listing every item in your shop/gallery by quantity which is extremely limiting...

basically the search filters are completely negated by the 'sort by' arrows.
