I've noticed I still get sP in my shop, and when I click the notification, I can withdraw it. However, if I go to the "My Shops" on the sidebar, my shop doesn't exist. When I went to view the reported bugs forum, only 3 topics showed up though it stated there were more than 6 pages of material. I just wanna stock my shop.

The old shops are now called legacy shops. You can still sell if the items are already priced but you cannot reprice or move items there. You need to make a new shop. There is more information about the move here https://subeta.net/forums.php/read/854270

So what happened to the galleries I had? Also why? Why was this necessary?

Once you create a new shop you can see all old shops and galleries on the dropdown shop menu. The old shops were basically killing the site
