I'm sure this is already on your list of issues, but like everyone else above I'm having to quit plenty of quests now because items are expensive or completely out of stock. Pete wants Sushi, which is in 0 user shops, and Alexander keeps asking for Unscented Candles, which are currently around 3m.
I reckon a check should be done every now and again to remove items over a certain price in user shops (1m? 500k?) from the request pool. In terms of actual timing I don't know what will overload the server, obviously I wouldn't want to be pinging the database every second if that'll tank the site's usability, but at the moment these bonuses better be pretty dang good if Alexander wants three million sP candles multiple times a day.
Edit: now that I've finished all my quests - the Wizard is also asking for Sushi, and I had to quit out of all 5 of Rumi's quests because she's after the My Love Sticker. I snagged one from the NPC shops, but it's more valuable to sell a 2m sP sticker than give it to her.

Rumi no longer asked for the My Love Sticker. was requested by Rumi, so I gave up that particular quest. Kumos Saggi had a pitiful payout today. It pales in comparison to Legacy Saggi. The other Kumos Quest givers paid pretty well.[/quote]

Saggi is completely unpredictable. One quest gave 400k. On Subeta I know that if the rarity is high enough, he will reimburse enough for higher priced items. Not so on Kumos (now). And he is still on WE mode - with 70k barely meeting the expenses if partly taken from vault!
I loathe 3 item quests on Subeta. Love Alexander, therefore. 4 Kumos items on most quests are a chore. On Subeta most NPCs at least vary in amount of items asked for (even though those are less profitable, of course).
I quit 1 Rumi quest, because he asked for an expensive holiday shop item (also in that currency too expensive to buy there)
Best questgiver is Maybel - her items are mostly stocked (thus fast questing) and she has a generous payout.
The falsely claimed "item in stock" desease is spreading.
Item requests again redundant for days now.
All in all I think it's much too much for a testing field. It's at least twice as time consuming doing quests etc. on both sites :-(.
Trying out the new Library quests and had some issues:
After the first quest, a survey popped up asking me about my reward for that quest - blocking the quest rewards so i couldn't see what they were. That was frustrating. I had to completely guess at the answer.
The quest was acceptable rewards (books) but most of them had broken kumos item popups (item could not be found errors - never saw those on kumos before)

The item availability / pricing was messed up too as one of the candles Alexander asked for was overpriced by a lot (over 200k sp I think) so I just quit that quest.
I didn't notice it being that much faster, and also, the "quest expired" popup that was happening before making the page jump around still happened. It's super annoying and slows down my clicking as what I'm trying to click on shifts position that is a bad UI thing, please see if you can make it not do that, there could be a reserved place for that error that is held even when the error doesn't happen.
Something positive: really loving the new kumos item popups (when they work)! and also the kumos forum upload images thing is great! and being able to post 2 times in a row is super nice too ❤ and emojis being working in posts is also amazing and lovely. And thanks for fixing editing on kumos forums.
Now for the problem I'm here to complain about - questing item issues seem worse, not better.
Take a look: Pete was terrible today. Let me show you. The first time, he asked for one item that was priced too high, so I quit the quest instead of doing it:

I had a similar problem with Maybel on the Buttwings but I realized I could just go fight for it and did (took about 7 battles vs a very easy opponent)
There was also one thing with the Wizard but he only aske for it once.
So overall I think the attempt you made with the items is not working as you would like. It's actually quite a bit worse for me than before the change, I'd figured out how to do it and now it's different.
Saggi is also giving lower rewards now (he was giving me about 500,000 per quest before and now more like 150,000 per, lost money more than half his quests today, they are NOT worth doing if you lose money that often)
Quests themselves are very smooth today! I haven't had any lag on Kumos for a couple of days, which has made it easier to get through all the quests.
Pete asked for Sushi once, but since it's down to 160k I didn't mind buying it. Overall I only had to skip one Alex quest because he wanted a 2m sP sofa, I completed all the others.

I preferred the previous item pools that NPCs asked from. Rewards are much too many items. (Since they moved further up into view now, I get to see them sometimes.)

Quests have been giving out Freyalise stuff for a couple of days.
I stand corrected once more -- Maybel is no longer my favourite! Apart from asking for the Buttwing every day only one minion is purchasable, the other not stocking and usually expensive. Today she asked for a Pineapple of Torture and Maiming, which I haven't seen in...decades...? Actually I'd forgotten it even existed. 300k in usershops. Since she usually is generous I thought I'd give it a try. She paid not even half of it.
Maleria has a thing going on with that Evil Magic Wand and asks for Elixirs as well. Payout 194,749sP for a 1.222.000 plus a 60k item. I'd really like to know, what the item value bonus represents.
It takes endlessly for the quest to calculate and spit out the result - actually it just spins for a long time, then stops and the turn in button has to be pressed a second time. So far this has happened twice.
Saggi: Starlight Telescope (132k), White Pearl Double-Strand Bracelet (23k), Ruby Glitter Flats - this greedy thing gives back 100,020. I guess he can look somewhere else for someone to run his errands... Emperors Brooch & Draped Obsidian Belt - no, definitely not Uber Shield & Aquamarine Cabochon Ring - could have done that, but 100k isn't cutting the edge for a mio sP item Fire Dreamcatcher & Rose Quartz Cabochon Ring - nope Earth Dreamcatcher & Topaz Studded Silver Belt & Wave Engagement Ring - Loss might not be so high, thus I tried, luckily was given 175,028 sP for 116k investment.

Thoughts: Librarian requested several high priced items. were all requested, so I had to give up on those quests. Rumi asked for [item=Blue Bring on the New YEAR! Sticker], so I had to give up on those quests. I do NOT like New Years Shop items being requested for any quest, as those new years tokens are difficult to come by of all the currencies. The sP prices of those new years items reflect that. Kumos Saggi once again disappointed with low payouts. Legacy Saggi paid 836,823 more than Kumos Saggi.
The item pool for quests needs to be adjusted. Legacy is much better at this. I don't care if Rumi asks for stickers or beans - I just want to complete the quests and get rewarded.

Smooth questing today! Completed all quests except for stickers (3 out of 5) and saggi (4 out of 5)
Was satisfied with: improving UI, variety of item rewards, and receiving seasonal items as part of quests.
Was disatisfied with: some overly inflated items, profit from Saggi.

I forgot to do screenshots, but one of the stickers that Rumi requested was the You Guessed It Sticker 
A fair bit over 8 million. A previous one I did grab, foolishly, was the My Love Sticker (may have been a different one, the price tag was a bit over a million). Quest reward didn't fix that, sadly. Similarly, a Saggitarius quest requested a 1.9m sP item, while the quest reward was only in the ~70k ballpark.
Next round of quests I'll make sure to provide screenshots.
Saggi really doesn't know, what he is doing - asking for a Dreamcatcher, which all have an extraordinary high price in NPC shops already, and almost equally expensive jewelry and then he only pays 100.039, when for the peceding 2 quests he paid 250 or so.
I quit all 5 Rumi Quests, because he was stubborn and didn't give up asking for My Love Sticker, which I am not giving to him unless he pays adequately. On the last one he wanted Peace and Quiet Feli Sticker on top, which is a New Years Shop item. As others have pointed out, the scarcest currency of all, so hardly anyone is going to waste it on measly paying quests. Let alone holiday shops don't even exist on Kumos yet - I guess I've mentioned that before...

He's not even covering for 2 super rares at 125k - again only 100k. I thought I'd give it a try, since he has been paying "properly" a few times over the days.
Is there not a way to properly randomize the items that the quest givers ask for?!? I had to quit a third of my quests today due to outrageously inflated items from them requesting the same things over and over.
I was excited about Alexander's quests being added but they're mostly not possible because he asks for stuff from a small pool that's way overinflated and doesn't pay enough to justify buying it.
Rumi's quests are starting to become impossible too. She keeps asking for super expensive stickers. A lot of holiday ones, some are just overinflated from repeated requests. So many repeated requests.
Saggi is almost not worth doing right now. His rewards are unpredictable too, so I take chances on him that I might not for other quests and often lose money or break even, but once in a very rare while it pays off. I still don't like gambling.
I have to cancel so many unreasonable quests now that every day, I worry I won't get enough done to claim the CSC reward. Somehow I always do, but it's like... stressing me out. That message about my streak resetting constantly also upsets me even though there doesn't even seem to be a prize for it yet lmao it's just kinda insulting, like it's somehow my personal failure that I refuse to get ripped off on quests.
I know you're probably not working on Subeta/Kumos much right now because of the holidays and that's totally reasonable! Just putting this feedback out there for when you have time to mess with the quests again.
Edit: I forgot the actual most annoying thing right now is how many times the quest page will say an item is in stock, so I'll follow the link to buy it and it's actually out of stock (this seems to be getting worse). So I have to go back and click the other link to search usershops instead. Not only does it suck to miss out on the lower-priced item when I think I'm about to get a deal, it's like running into brick walls over and over and it throws off my rhythm. Ideally, this would get fixed and the quest page would stop lying to me, but another thing that would be really awesome anyway and would make this less of a stumbling block when it happens would be if there was just one shop search link that combined the NPC shop with usershops, the way it works on Legacy now. I have no idea why the shop search was divided into NPC vs usershops on Kumos but in my opinion it's a total disadvantage. Having them combined in one search simplifies searching for an item and makes it way easier to compare prices.

Since Synth mentioned this again, I'm also agreeing with it once more.
Also, if I see an item on site, that I'm intereste in for whatever reason, I want to search it, see where it comes from and if it is available in shops just then all at the same time as we can on legacy.
We are doomed to constantly guess, where an item stems from - food items for example can restock in at least 5 shops, if we are not a library on every single item on Subeta, that's a lot of searching high and low, probably only to find out, it's not stocking right now anyway. Or we're constantly asking Subetalodge, which, by the way, is not always correct about items, that were once retired from a long ago deleted shop and brought back in an other one now. Kumos is so tedious and often annoying/disappointing - like I'll backtab to Melody's page, to see which of her gifts came from which year, but that page has refreshed an just tells me I've already collected. Things like this...
