tagliatelle carbonara is my favorite dish, it's italian; i make it with adjustments (only cook it on pancetta briefly, no pork mixed in + 2 vs average suggested 6 eggs & no egg on top). i love it (esp in winter) bc it has a warm, cheesey, little smokey (from pancetta) taste that's unique. :) a real comfort food for me!
