Short bread cookies! 🎅

INGREDIENTS
1 cup salted butter, cold and cut into pieces
½ cup granulated sugar
1 teaspoon vanilla extract or almond extract
2 ¼ cups all-purpose flour
Optional: red and green sprinkles
INSTRUCTIONS
In a medium bowl of an electric stand mixer cream together butter, granulated sugar and vanilla extract until well combined
Add all-purpose flour and mix until combined
Knead dough by hand for 5 minutes
The dough should end up soft and pliable, similar to play-dough, not sticky
Form a ball, wrap tightly, and chill for about 30 minutes
While the dough is resting, preheat oven to 350F. Line baking sheets with parchment paper and set aside
Roll dough out to about ½ inch thickness, use a cookie cutter for shapes
Place each cookie 2 inches apart on baking sheet, sprinkle sprinkles over the top if desired and gently press into dough
Bake 8-10 minutes, or until edges are golden brown
Immediately transfer to a wire rack to cool

xmas time means TRIFLE!!
here is a recipe that is pretty close to the one we use (which is from an old cookbook which i'm too tired rn to dig out). we use a delectable home-made egg custard, and instead of the raspberries&cherries we use tinned peaches, combining some of the juice from the tin with the sherry, and properly dousing the sponge roll (that and laying the sponge slices in the bowl used to be my job when i was younger!)
mmmmm i can't wait to eat some!! we have it for desert on xmas day, as well as breakfast on boxing day, and any other time we feel like it until it's all gone, it's our favourite xmas treat! ^^
this is an in-progress shot, but the finished product isn't as pretty with the bowl she uses >< ours looks pretty much like this except we have a nice big round glass bowl we make it in so you can see the glorious jelly roll through it. we finish ours basically like this, a nice layer of custard on top to cover the jelly, and dolloped whipped cream around the edge, that's about as fancy as it gets (i think we put some sliced strawberries on top one year whoa fancy)

I have been wracking my brain but have no holiday treat that I love that's not year round. My family does some rum cookies and cream cheese cookies, but I don't like them. Um. Brownies with mint chips?
I use the old Saco Premium Cocoa recipe. Ingredients 1/2 cup butter 1 cup sugar 2 eggs 1 tsp vanilla ½ cup flour ¼ tsp salt 1/3 cup SACO Premium Cocoa ¾ cup pecans, chopped
Melt the butter on the stove add it hot to sugar and cocoa. Put the rest in. Replace the pecans with half a bag of mint chips. Use 8x8 pan, greased. Oven at 350. Bake thirty minutes.

My favourite one to buy is Spekulaas. Dutch/Belgian spice cookies. You might know them produced by the brand Lotus

Ah man, my mother-in-law makes these guys for us every year and my husband and I eat WAY TOO MANY in the weeks leading up to Christmas. But how can you not??
Italian Ricotta Cookies

[spoiler=Cheesy Pull-Apart Garlic Bread! ]
1 loaf of bread, ideally round (i use tuscan)
1/2 cup Salted Butter (melted)
2-3 cloves Garlic (or 1/4 teaspoon garlic powder)
1/2 Tablespoon Fresh Parsley (or 3/4 teaspoon dried parsley)
Guesstimated amount of Mozzarella Cheese, I cut and use ~1/2 a 10 oz block of cheese.
Instructions
Preheat oven to 350 degrees. Cut into the bread in 2 directions to create squares without going all the way through the bottom.
Cut mozzarella cheese into thin-ish strips, makes it easier to get enough cheese where you want it.
Melt the butter, garlic, and parsley together. Drizzle mixture into each cut of bread. Press mozzarella cheese into each cut.
Brush the top of the bread with the remaining mixture.
Wrap with foil and bake for 20 minutes. Remove from oven and open the foil and cook for 5-10 minutes longer until toasty.[/spoiler]
I lived there for 5 years (from 19 to 24)with my now ex husband as he was an air traffic controller.
We started in one of those eco houses in Heerlen and then we moved to a little village called Ohe en Laak. It was between Maastricht and Roermond and the river opposite our house on the other side bordered with Belgium. Where abouts are you from lovely?
That look so yummy. I loooove cheese. I am waiting for my local supermarket to get these back in for christmas, they are a flavoured bread wreath which you bake a camembert in the middle of, yum!

They only have them for a week and they sell out super fast!
Christmas isn't Christmas without these Gingerbread cookies. :) It's been a tradition in my family since I was a toddler.

My partner makes me peppermint fudge. <3 Fudge is my favourite treat by a long shot and the way to my heart, so they learned to make all kinds of flavours for me in secret because they are insane incredibly wonderful. Here's a (random) recipe that seems similar to what they do.

Oh that's really cool! I love these eco houses, it's my dream to live in such a tiny house, one day 😍 Do you miss the Netherlands sometimes? Well, I'm from Germany but I used to live in the Netherlands due to my studies. It's my favourite country in Europe (based on my limited knowledge) and I really miss it immensely because I had to move back to Germany in March because of the pandemic... but it's really funny because you literally lived just around the corner, I used to live in the Limburg area as well ;)

Christmas Crack is my favorite and laziest dessert to make every year. It definitely lives up to it's name as you can't just eat one. It can even be made dairy-free! Enjoy your treats!
Ingredients: sleeve of saltine crackers 2 sticks butter 1 cup light or dark brown sugar 1 tsp pure vanilla extract 1 12 oz Milk Chocolate Chips
Instructions: Preheat oven to 400 degrees. Line cookie sheet with parchment paper. Cover cookie sheet with one layer of saltine crackers close to each other. Bring butter and brown sugar to a boil, stirring continuously for 2 to 3 minutes. Remove from heat when it starts to brown, add one teaspoon pure vanilla extract. Pour mixture over crackers, then bake for 4-6 minutes.
Remove from oven, pour a bag of milk chocolate chips on top of crackers. Allow to soften for a minute or two, then spread chocolate evenly on top of crackers. Cool, then break up into bite-size pieces.
(Optional - add nuts, sprinkles, or M & M's on top of melted chocolate.)
