fair bit of warning, i tend to like true crime podcasts so most of the ones i listen to are in that sort of genre, but my go-to's are:
Tenfold More Wicked -- discussing murderers in a series of episodes, basically doing kind of a deep dive on one at a time. calming (in my opinion) despite the topic.
That's Messed Up: An SVU Podcast -- two people talk about an SVU episode, the real cases behind it, and then talk to someone who was on said episode.
This Podcast Will Kill You -- all about diseases and other things! however there's first hand accounts of those who have said affliction at the beginning of episodes and some can get a little stomach-churning. really informative though, love them!
Stuff You Should Know -- the name is kind of descriptive. i put this on when i want background noise lol.
My Brother, My Brother, and me -- i know it's been said here multiple times but!! it is really nice. i listen when i need a pick-me-up or if i just want something nice to listen to.
i used to listen to Small Town Murder a lot but my humor is... not the same as theirs, really. i also used to listen to My Favorite Murder a lot but fell out of listening for some reason that i don't remember now.
i have heard Sawbones is good, and if you want scary stuff i hear The NoSleep Podcast is pretty nice.
Seconding with You're Wrong About - it's really interesting and the hosts are super informed and funny. I also like Maintenance Phase, which has one of the same hosts, it's kinda the same idea as the first show but with a focus on diet trends and popular misinformation about weight loss. Check out their recent episode on Celery Juice if you want to listen to something completely wild.
I also love How Did This Get Made. A must-listen if you're a fan of MST3K or just really like comedian Jason Mantzoukas.

Ooh okay, this'll be a long list. But my favorites are the following!
I might be out of the majority but I really enjoy the "H3 After Dark" Podcast, "H3 Podcast", and was OBSESSED with the "Frenemies" podcast before it blew up into flames a couple weeks ago. Although, I do like the "Families" podcast now, so far. But if you havent seen FRENEMIES that's a big must watch/listen, you can watch the video version on Youtube.
I also really like "Guys We F***ed" and when I'm bored I listen to "Crime Junkie"; "Tigerbelly" is good when someone I know guests on it, otherwise I find it a little boring

Wayward Guide for The Untrained Eye - A fictional podcast about crime in a small town surrounding the local politics (it's really good I promise)
I'm a big fan of NADDPOD, an actual-play DND podcast. I remember thinking it had a rough start but 90 episodes later into the first campaign and it has grown on me immensly! I also love The Magnus Archives which is a horror podcast as some have already mentioned, although I've been putting off listening to the last episodes... don't want it to end haha.
