Erhu's great. I'm a huge fan of stringed instruments, especially in the mid to lower ranges (higher strings like violins are nice but can get a bit piercing to my sensitive head after a while). Cello and double bass are just chef's kiss -- I can vibe on them for days.
Bass guitar too, esp. some fat, emotional bass lines running in odd compliment to what's going on around it, and all the various harps, with a nod to the medieval bass, the theorbo.
Piano's always nice and I enjoy creative organ, pipe organ, or synth playing. For modern OS-driven electronic, a good loop.
Heavy rock/metal instruments combined with classical/medieval favourites like bagpipe, hurdy gurdy, strings, whistle/pipe (such as in Eluveitie's Inis Mona).
Low key one of my favourite instruments is the ocarina, especially if they're deeper or more mellow sounding than the high-pitched tunes you might recall from Zelda games. They're basically a holey potato made of wood or clay. I own three; one "serious" hand-sized ocarina in a haunting, mellow tone, and two pocket/portable ocarinas that I can wear around my neck and take around for fun (a LoZ rupee and a frog).
Some loves of my life are marimba, glockenspiel, and chimes/tubular bells.
The erhu is wonderful, but I have to say I'm a huge harpsichord and organ fan. You rarely hear either in modern music, but whenever i hear a bit of it i just feel like a really sexy, fun vampire >:3
Probably one of the main reasons I really like baroque-pop or any other kind of baroque fusion LOL
