Ok, THESE are AMAZING. my kids Still make these and they're grown! one of my best and easy go to recipes. way lighter than banana quick breads, these come out golden and moist and fluffy, like little cakes! if your bananas are super ripe/sweet, just use a bit less of the sugar. cool on wire racks and i dare you to not eat them all, esp with a bit of vanilla ice cream and caramel sauce....

Banana Drop Cookies yield: about 5 dozen cookies,

1 1/4 cup sugar 2/3 cup shortening 1 tsp vanilla extract 2 eggs, unbeaten 3 bananas, mashed 2 1/4 cup flour, sifted 2 tsp baking powder 1/4 tsp baking soda 1/2 tsp sea salt 1 cup chopped nuts (optional)

  1. Cream sugar, shortening, and vanilla together until light and fluffy.
  2. Add eggs and beat well. Stir in mashed bananas.
  3. In a separate bowl, mix sifted flour, baking soda, baking powder, and salt.
  4. Mix the flour mix into the banana mix in sections until as smooth as possible. If you're including them, this is where you stir in the nuts.
  5. Once it's all mixed up, chill the cookie dough for half an hour.
  6. Drop by teaspoonfuls a couple inches apart on greased baking sheets.
  7. Bake at 400 degrees for 8-10 minutes or until lightly browned.

My BF is obsessed with muffins. He loves anything muffin-related, so you could try doing a muffin!

Here is a very basic muffin recipe. I'm also doing this one, to get into muffin-baking.

SPOILER (click to toggle) Yield Makes 12 muffins

Ingredients

    2 cups white flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    2 tablespoons sugar
    1 egg, slightly beaten
    1 cup milk
    1/4 cup melted butter

Preparation

    Preheat the oven to 375°F. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour; the batter should not be smooth. Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each. 
Blueberry Muffins.
    Use 1/2 cup sugar. Reserve 1/4 cup of the flour, sprinkle it over 1 cup blueberries, and stir them into the batter last. 
Pecan Muffins.
    Use 1/4 cup sugar. Add 1/2 cup chopped pecans to the batter. After filling the cups, sprinkle with sugar, cinnamon, and more chopped nuts. 
Whole-Wheat Muffins.
    Use 3/4 cup whole-wheat flour and 1 cup white flour. 
Date or Raisin Muffins.
    Add 1/2 cup chopped pitted dates or 1/3 cup raisins to the batter. 
Bacon Muffins.
    Add 3 strips bacon, fried crisp and crumbled, to the batter.

my favourite is oatmeal chocolate chip cookies -- just replace raisins with chocolate chips in any oatmeal raisin cookie recipe.

i don't really do much baking at all though lol -- my usual extent is betty crocker brownies from a mix.

edit: i did remember about the lemon bread of the gods. at my SO's last apartment they had a breadmaker, and this was a great recipe for it the name is an undertale reference. if you have a breadmaker i highly recommend!

vegetable oil: ⅓ cup butter: 2 tbs eggs: 3 vanilla extract: 1 tsp lemon extract: 2 tsp lemon juice: ⅓ cup salt: ½ tsp sugar: 1 cup flour: 1 ½ cup baking soda: ½ tsp baking powder: ½ tsp

bake with cake cycle (quick cycle may also work)

I tried a lot of chocolate chip cookie recipes and finally found one that pleases my toddler and my super picky husband.

Soft and Chewy Chocolate Chip Cookies

When I had morning sickness I'd suck on ginger drops (Gin-Gins) which helped a bit. I absolutely hated the taste of ginger but after using those so often I can actually stand the taste now. I hope yours eases up soon!

You can bake them without the toffee if you prefer your desserts less sweet. Also, they're still nice when I make them like before going to sleep and let them sit in the fridge for just 12 hours or so instead of 48h (so... much... time...), baking them right in the next morning/afternoon.

written recipe INGREDIENTS Toffee 6 tablespoons (¾ stick) unsalted butter ¾ cup light brown sugar, lightly packed 1 teaspoon kosher salt Water, as needed

Cookie Dough 1 cup (2 sticks) unsalted butter 4 ice cubes ¾ cup granulated sugar 1½ cups light brown sugar, packed 2 teaspoons espresso powder 2 teaspoons kosher salt ½ teaspoon baking soda 2 large eggs 2 teaspoons vanilla extract 2½ cups all-purpose flour 6 ounces 50-70% cacao chocolate, chopped Flaky sea salt, for sprinkling

PREPARATION

  1. Make the toffee: Line a baking sheet with parchment paper.
  2. In a medium nonstick saucepan over medium heat, melt the butter, brown sugar, and salt, stirring until evenly incorporated. If there are grainy lumps or if the fat starts to separate, add a couple splashes of water and stir vigorously to emulsify. Continue to cook, stirring constantly, until the mixture reaches 290°F (143°C), about 10-15 minutes.
  3. Pour the toffee onto the prepared baking sheet and spread out slightly with a spatula. Freeze until ready to use, about 30 minutes.
  4. Make the cookie dough: Add the butter to a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty. Watch carefully so the butter does not burn. Remove the pot from the heat.
  5. Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining 3 ice cubes and gently stir until melted.
  6. In a large bowl, combine the granulated and brown sugar, espresso powder, salt, and baking soda.
  7. Pour the brown butter into the sugar mixture and mix until combined. Don’t worry if it looks separated.
  8. In a small bowl, whisk together the eggs and vanilla. Pour into the sugar and butter mixture and whisk until glossy and smooth.
  9. Add the flour and fold with a rubber spatula to incorporate until the dough has no visible flour streaks.
  10. Remove the toffee from the freezer (it should be a frozen disc) and break it into chunks that will fit inside a gallon zip-top bag. Double bag the toffee and seal both bags. With a rolling pin, break the toffee into small pieces.
  11. Fold the crushed toffee and chopped chocolate into the dough until evenly distributed.
  12. Using a large ice cream scoop or a ½ cup measure, scoop the dough onto a parchment-lined baking sheet. Wrap the baking sheet in plastic wrap, but leave a small opening at the corner of the tray. 13. Let the dough rest in the refrigerator for at least 48 hours. This will allow the flavor to develop and the dough to dry out a little as it rests, which will result in less spread when it bakes.
  13. When ready to bake, preheat the oven to 325°F (163°C). Line 2 baking sheet with parchment paper.
  14. Arrange the cookies on the baking sheets, leaving at least 2 inches of space between the cookies and away from the edges of the pan.
  15. Bake until the cookies are golden brown with crispy edges, but are still slightly soft in the center, 18-20 minutes. Immediately sprinkle the cookies with flaky sea salt. then let cool completely. The cookies will be very soft at first but will set after they are fully cooled.

Well my favorite recipe is a 5 min chocolate mug cake. You just stick it in a mug in the microwave and you get cake really fast! :D <3

Ingredients 1/4 cup all-purpose flour 2 tablespoon unsweetened cocoa powder 1/4 teaspoon baking powder 2 tablespoon granulated sugar (you can add 1 tbsp. more if you like it a bit sweeter) 1/8 teaspoon salt 1/4 cup + 1 tbsp. milk 2 tablespoon vegetable oil 1 tablespoon hazelnut chocolate spread or mini chocolate chips

Directions Mix ingredients in a mug, mix well so you get it all a consistent texture, but do not over-mix. Place the nutella/hazelnut spread (peanut-butter or any spread) or mini chips in the center.

Place in microwave and heat on high for 70-90 seconds. (90 for lower wattage microwaves).

How to Bake a Cake With Baby Assisting

2Cups flour - baking soda - salt - 1egg - shortening - nuts

Turn on oven. Get out the bowl spoons and ingredients, Grease the pan. Crack nuts. Remove 18 blocks and 7 stuffed toys from the kitchen table. Measure 2 cups flour. Remove Baby's hands from flour. Wash flour off. Measure 1 cup flour to replace flour on floor. Put flour, baking powder, salt in sifter. Get dust pan and brush up pieces of bowl which Baby knocked on the floor. Get another bowl. Answer door bell. Remove Baby's hands from the bowl. Wash Baby. Get out egg. Answer phone. Grease pan. Return to kitchen and find Baby. Remove grimy hands from bowl. Wash off shortening.

Pick up greased pan and find 1/4 inch nut shells in it. Head for Baby who flees, knocking bowl off the table. Wash kitchen floor. Wash table. Wash walls, wash dishes. Call the bakery. Put Baby in crib. Lie down. 👶
