It's tricky with the way it works here (art style wise) but of course hair looks slightly different shades under different lighting, and there's hair extensions and ways you can pin it up to look longer or shorter or braid it or whatever. So even realistically you can vary it quite a bit.

Can't do m8. I try to keep realism even in my fantasy games. My character is a human (which reminds me I should work on her backstory), so she has to have normal human hair.

I was just talking to my friend about that. She was looking at the World of Warcraft statistics page and noticed that the biggest proportion of players were Humans and Blood Elves. I told her I thought there's a sizable minority of players who will rather play a Human even in a fantasy game because it's what they are themselves. (and the blood elf, in the horde it looks the most like a human I think)

That's probably it. We are humans so we most likely want to experience what a fellow human would on a fantastic experience.
