Hungarian potatoes
There's apparently more than one recipe for this since my beau found one online that varies greatly from one in an old cooking textbook from his culinary school days.
We decided to give the internet one a second try last night since we can both eat eggs again (we've done it once before, but that was back when eggs made us both ill to eat and it didn't go over so well then).
It's basically potatoes baked off with paprika, eggs, sour cream (we subbed Greek yogurt as I can't eat sour cream), and cheese.
It was so good~

Egg drop noodle soup
We made a vegetarian friendly version (with added noodles since we had some egg noodles in the freezer needing used) last night for dinner, it was so good~
I've not had egg drop soup in forever since all the restaurants make it with chicken broth, blech.
