Pasta with herbed avocado 'butter' sauce
My beau and I did an experiment to see if we could emulate butter sauce with just avocado and a bit of oil (also avocado, as it's what we happened to have on hand; dairy started getting tricksy with my tummy so I had to cut it out of my diet, now we're going through an experiment process to figure out how to make proper replacements that still hold up against their dairy counterparts, I'm so glad to have my chef beau to work through this with me), it was a resounding success, aside from the color you'd hardly be able to tell our sauce from the real deal, the texture and taste were spot on.

Tofu sandwich with Thai chili sauce
I love this sauce, which is kinda funny considering my beau just revealed to me that the stuff he brings home for us to use is just the scraps left over from the actual sauce at the restaurant where he works, they would just throw this stuff out if someone doesn't take it home, and we've used it for so many things.
