I'm new to this website so this is just out of curiosity, but what's the point of baking? Spending a ton of money on ingredients just to bake and level up and keep spending more for new recipes? Are there achievements or prizes out of it or is it just supposed to be a fun little hobby?

There will probably be achievements and/or prizes/special things released in the future, but right now there's nothing to do besides just level up.

Personally I just added all the baking ingredients to my wishlist so that if I get them through questing I know to stick them in my vault, and I'll get around to actually leveling baking later on.

There is an achievement with tiers for feeding your pet certain numbers of different food items, so for collectors like myself, it's a way to get those food items c:

This may seem contradictory, but I myself don't use the bakery because of the expense, and I feel like it's cheaper just to pay others who do for items I need since I don't really bother with restocking ingredients from the main NPC shops where they're cheaper, so I suppose in that aspect, some people might use baking to turn a profit from food collectors.

Plus, I believe there's always the possibility that subeta could add achievements for it in the future!

But for pet gourmand purposes/ TC/ whatever, it's much cheaper to buy baked items than to make them yourself. At least most of them.
