Is birdwatching retired or something can't click on Rosemary at all.

Yes, it's retired for now. It's been mentioned that they are planning to have different things to do in the park depending on the season, so it will probably be coming back in the future.
The next thing should be released soon, hopefully.

Yes, Bird Watching is retired for now! Like said, we want something for each season. The bird watching was a good spring thing, this bug thing is a good late spring/summer thing!
fungus in the fall please. small mammals in the winter.

make it a skitters thing, or make a new zombie in charge of it :p I always wanted to go foraging for mushrooms but I would pick poisonous ones and kill everybody by accident. and I wouldn't eat them because ick.

The Underground does need representation on the council... So does Shengui Guo for that matter.

In Russian fairytales mushrooms get hunted for in the Forest, so maybe Veta's councilor. In Darkside, you have to scramble for your food among the darkness, caves and ashes, so maybe that councilor.
Maybe not another cruise, but it would be nice to get some representation for those areas :) The Veta counselor is Rosemary, who does bird watching!
I've brought up the fungus idea to the creative department. :x

winter is harder, but the only thing I can really think of is some small mammals. hibernating ones, squirrels, foxes, Stoats that change to have a fully white coat in the winter when they're called Ermines, stuff like that

Ice fishing would be a fun one for the winter, basically set the line and eventually something will bite, but that might overlap with the Underground fishing. Or something with penguins. Penguins are adorable.

Fungus is great for fall. Or helping to feed animals so they can get fat before hibernating :)

That's true. But it doesn't fit into the Councilor's quite as well. Maybe it could be revamped a bit so it works with that theme. :)
Are bugs to be found in certain locations or is it totally random? Vuz I just went to every location on the main map and did not find what I was asked to bring
They can be found anywhere on the site, not just explore sections! You could find them in your inventory, on the games page, anywhere! It might take more than a few refreshes to find it. Some people have been lucky and got it in 3 pages, some people it's taken a while. I think my bug today took me roaming around for a good 25 pages or so :x
Just keep trying! It took me about an hour to find my Hornet last night. I assume that the Vesnali Flowers are making it more difficult at the moment.
I want to hunt for cactus. Let me hunt for cacti.
