Oh man, grilled cheese is fun. My favorite way to make it is to mix a little garlic and Italian seasoning into the butter! So, so good.
Oooh I love grilled cheese! I, like others, also like to put mayo on my bread. I also like to put the burner pretty low to get the cheese nice and melty. It's a little more difficult because I use gluten-free bread due to stomach issues, but still worth it!
My favorite variations are with gouda and d'anjou pears, but I also enjoy plain old cheddar dipped in tomato soup. Sometimes I like to mix it up with other variations: this site has some great ideas on different cheese and herb mixes to use, whereas this list of recipes put a really fun spin on the grilled cheese!

Im planning to have 'cheese on toast' for tea, I live in England, we literally put bread under the grill and make toast, butter it and then put cheese on and sometimes sliced tomatoes and grill that. I have got a cheese toastie machine like in the picture. But all these ideas are fabulous! buttering the bread and putting it in a frying pan so you can add all sorts to it,sounds yummy! Peanut butter and bananas here I come ;0)

Yep, you need tomato soup. I always eat mine with tomato soup. And I always make it with cheddar... Here in Switzerland, it's hard to get just cheddar, so I usually use a shredded cheese mix. Most of the mixes have cheddar, mozarella, and at least one more regional hard cheese in them. But not too much cheese, or it won't melt! And it has to melt! I also often add ham or turkey inside. But if you do that, you have to put cheese on both sides of the meat, so that it sticks. Otherwise, the sandwich will come apart.

I've only recently (ok, last couple years) been experimenting with add-ons to grilled cheese. One thing that I REALLY liked I learned from my bff, a sprinkle of garlic powder on the butter. OMFG. Honey mustard is a great add-in. I've tried mayo (which i heard of from 30 Rock, which is how I ended up doing less traditional grilled cheeses), but it didn't seem to turn out right for me. Sometimes I'll par bake a veggie burger and make it into a grilled cheese. Holy hell that's amazing.
