If vending were deleted, then I have the feeling that books of any rarity would climb to insane prices and wizard tokens would deflate quite a bit.

Although... if you were to do a like... 'vending-free' month, or something... to let prices inflate a bit. Hmm. I vend like it's my job and even I wouldn't mind that.
My guess is that deleting vending would result in inflation.

Let me add onto that point, not just inflation in item prices but it would also result in people making more sp. Unless this is packaged with something else, more people will do more quests than just their typical runs to get sp/items. People would obviously turn to hoarding. People would save up much more sp in order to afford things which in turn would cause more sp inflation.
I wonder what would happen if we deleted vending.

I am not even sure if most vendable items would even go up in price as much as you all think. I find that there isn't a big price difference between vendables and similar rarity non-vendables. The only vendables that really seem to be super cheap are the ones from Ocean Depths and the non-books from Blue Sky. Stuff from shops like the Food Market or Icy Goods don't seem to differ much in price than stuff from shops that don't vend such as the Grooming Parlor or Beach Shack.

I think the economy would collapse if vending was deleted.
1: Not many players restock - the majority don't seem to have hours to spare for patrolling the shops looking for stuff which they can sell for a profit. The only way most players would be persuaded to restock is by holding restock wars where items come in an restock war rates.
2: The main shops restock very erratically. There can be old, mid-range items which don't come in for days so the prices in player shops can end up as a million +. I'm guessing it's because a lot of people use their shop stock on quests. Mid range books are ridiculous prices even though they can be vended at Blue Sky. Maybe most of the population are using the machines which give out clothing because new wearables are always popular. Mid range plushies and beanbags can be ridiculous prices too but then, how many restockers fancy tackling the beanbag and plushie shops?
Pleeeaaase don't delete vending :( It's the quickest way to fill a wardrobe Dx -goes to furiously vend before anything happens-

deleting vending would make restocking the only way to acquire items. it would become so competitive and crazy and anyone without a decent internet connection would get royally screwed. also all the items that disappear into the ether when we turn them in would stay in circulation, leading to way too many items in play. not to mention, people would go b-e-r-z-e-r-k.
